- 4 boneless, skinless chicken breasts
- 1 cup mayonnaise
- 1/4 cup apple cider vinegar
- 2 tablespoons Dijon mustard
- 1 tablespoon honey
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 4 hamburger buns
- 1 cup coleslaw (optional, for topping)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your grill or stovetop grill pan over medium-high heat. Oil the grates if using a grill to prevent sticking.
- Season the chicken breasts generously with salt, pepper, and a sprinkle of smoked paprika.
- Place the chicken on the hot grill and cook for 6-7 minutes on one side without moving them.
- Flip the chicken and grill for another 6-7 minutes, or until the internal temperature reaches 165°F (75°C).
- Remove the chicken from the grill and let it rest for 5 minutes to allow the juices to redistribute.
- In a medium bowl, combine mayonnaise, apple cider vinegar, Dijon mustard, honey, garlic powder, onion powder, and a pinch of salt and pepper. Whisk until smooth.
- Taste the sauce and adjust seasoning if necessary. Set aside.
- Shred the rested chicken using two forks or chop it into bite-sized pieces.
- In a large bowl, combine the shredded chicken with half of the white BBQ sauce, tossing until well coated. Add more sauce if desired.
- Toast the hamburger buns on the grill or in a toaster until golden brown.
- Assemble the sandwiches by placing a generous portion of the BBQ chicken mixture on the bottom half of each bun.
- If using coleslaw, add a scoop on top of the chicken, then drizzle with more white BBQ sauce if desired.
- Place the top half of the bun on each sandwich.
- Arrange the sandwiches on a serving platter and garnish with chopped fresh parsley.
