  • 1 cup mayonnaise

  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 hamburger buns
  • 1 cup coleslaw (optional, for topping)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your grill or stovetop grill pan over medium-high heat. Oil the grates if using a grill to prevent sticking.
  2. Season the chicken breasts generously with salt, pepper, and a sprinkle of smoked paprika.
  3. Place the chicken on the hot grill and cook for 6-7 minutes on one side without moving them.
  4. Flip the chicken and grill for another 6-7 minutes, or until the internal temperature reaches 165°F (75°C).
  5. Remove the chicken from the grill and let it rest for 5 minutes to allow the juices to redistribute.
  6. In a medium bowl, combine mayonnaise, apple cider vinegar, Dijon mustard, honey, garlic powder, onion powder, and a pinch of salt and pepper. Whisk until smooth.
  7. Taste the sauce and adjust seasoning if necessary. Set aside.
  8. Shred the rested chicken using two forks or chop it into bite-sized pieces.
  9. In a large bowl, combine the shredded chicken with half of the white BBQ sauce, tossing until well coated. Add more sauce if desired.
  10. Toast the hamburger buns on the grill or in a toaster until golden brown.
  11. Assemble the sandwiches by placing a generous portion of the BBQ chicken mixture on the bottom half of each bun.
  12. If using coleslaw, add a scoop on top of the chicken, then drizzle with more white BBQ sauce if desired.
  13. Place the top half of the bun on each sandwich.
