Ingredients

  • 4 cups of seedless watermelon, cubed and frozen
  • 1 cup of fresh watermelon juice
  • 1 tablespoon of lime juice
  • 2 tablespoons of honey or agave syrup
  • 1 cup of ice cubes (optional)
  • Fresh mint leaves for garnish (optional)
  • Extra watermelon slices for garnish (optional)

Instructions

  1. Select a ripe, seedless watermelon. Look for one that feels heavy for its size and has a uniform shape. The skin should be smooth and free of blemishes.
  2. Cut the watermelon in half and scoop out the flesh using a large spoon, removing any seeds.
  3. Cube the watermelon flesh into small pieces, about 1-inch cubes, for easier freezing.
  4. Spread the cubed watermelon on a baking sheet in a single layer and freeze for at least 4 hours, or until completely frozen.
  5. While the watermelon is freezing, prepare the fresh watermelon juice. Cut any remaining watermelon into chunks.
  6. Blend the watermelon chunks until smooth. Strain through a fine mesh sieve if you prefer a smoother juice.
  7. Measure out 1 cup of fresh watermelon juice and set aside.
  8. In a high-speed blender, combine the frozen watermelon cubes, 1 cup of fresh watermelon juice, 1 tablespoon of lime juice, and 2 tablespoons of honey or agave syrup.
  9. For a thicker slushie, add 1 cup of ice cubes (optional).
  10. Blend on high speed until smooth and slushy, scraping down the sides as needed. If too thick, add more watermelon juice.
  11. Taste the slushie and adjust sweetness with more honey or agave syrup, or add more lime juice for tartness. Blend again to combine.
  12. Pour the slushie into glasses, filling them about three-quarters full.
  13. Garnish with fresh mint leaves and a slice of watermelon on the rim.
  14. Serve immediately with a straw or spoon. Enjoy the icy, refreshing flavor!
  15. Store leftovers in an airtight container in the freezer, allowing to sit at room temperature for a few minutes before serving again.
