  • 4 cups of fresh watermelon, cubed and seeded
  • 1/2 cup of freshly squeezed lime juice (about 45 limes)
  • 1/4 cup of simple syrup (adjust to taste)
  • 2 cups of cold water or sparkling water
  • Ice cubes
  • Fresh mint leaves for garnish
  • Lime slices for garnish
  • Optional: 1 cup of vodka or rum for an alcoholic version

Instructions

  1. Cut the watermelon into cubes, removing any seeds.
  2. Place the watermelon cubes in a blender and blend on high speed until liquefied (about 30 seconds to 1 minute).
  3. Strain the blended watermelon through a fine mesh sieve or cheesecloth into a large bowl or pitcher, pressing down to extract as much juice as possible.
  4. Set aside the strained watermelon juice (about 3 cups).
  5. In a separate bowl or pitcher, combine the freshly squeezed lime juice and simple syrup.
  6. Stir the lime juice and simple syrup until well combined. Adjust sweetness to taste.
  7. Add the watermelon juice to the limeade mixture and stir gently to combine.
  8. In a large pitcher, combine the watermelon-lime mixture with cold water or sparkling water.
  9. Stir gently to combine, being careful not to stir too vigorously if using sparkling water.
  10. If making the alcoholic version, add vodka or rum and stir gently.
  11. Fill a glass with ice cubes.
  12. Pour the watermelon limeade cocktail over the ice, filling the glass about three-quarters full.
  13. Garnish with fresh mint leaves and a slice of lime on the rim of the glass.
  14. Repeat for remaining glasses. This recipe serves about 4-6 people.
