Instructions

  1. Prepare the Watermelon: Wash the watermelon, cut it in half, then slice each half into 1-inch thick rounds. Cut the rounds into 1-inch cubes. Optionally, drain excess liquid in a colander for 15-20 minutes.
  2. Assemble the Salad: In a large bowl, gently combine the cubed watermelon, crumbled feta cheese, blueberries, and thinly sliced red onion. Sprinkle with chopped fresh mint leaves.
  3. Make the Dressing: In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, lime juice, and honey (if using). Season with sea salt and freshly ground black pepper to taste.
  4. Combine Dressing and Salad: Pour the dressing over the salad and gently toss to coat.
