  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup sun-dried tomatoes, chopped (optional)
  • 1/4 cup spinach, chopped (optional)
  • Olive oil for drizzling
  • Fresh basil leaves for garnish (optional)

Instructions

  1. In a large mixing bowl, combine the ground chicken, breadcrumbs, and grated Parmesan cheese. Mix well until all ingredients are evenly distributed.
  2. Add the chopped parsley, finely chopped onion, and minced garlic to the bowl. Stir to incorporate these fresh ingredients into the mixture.
  3. Crack the egg into the mixture and add salt, black pepper, paprika, and Italian seasoning. Use your hands or a spatula to mix everything together until well combined. The mixture should be moist but firm enough to hold its shape.
  4. If you are using sun-dried tomatoes and spinach, fold them into the mixture at this stage.
  5. In a separate bowl, combine the softened cream cheese and shredded mozzarella cheese. Mix until smooth and creamy.
  6. Optionally, add additional herbs or spices to the cheese mixture for extra flavor.
  7. Prepare a clean surface or a large cutting board for assembling the rolls. Lightly grease your hands with olive oil.
  8. Take a portion of the chicken mixture (about the size of a golf ball) and flatten it in your palm to form a small patty.
  9. Place a spoonful of the cheese filling in the center of the patty. Be careful not to overfill.
  10. Carefully fold the edges of the patty over the filling, pinching to seal it tightly. Shape it into a roll. Repeat until all the chicken mixture is used.
  11. Place the rolls on a baking sheet lined with parchment paper, spaced apart.
