  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 bay leaf
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 cup bell pepper, chopped
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cut the beef round steak into 1-inch pieces for even cooking.
  2. In a shallow dish, mix flour, salt, and pepper. Dredge each piece of beef in the flour mixture until well-coated.
  3. Heat vegetable oil in a large skillet or Dutch oven over medium-high heat.
  4. Add floured beef pieces in batches, searing each side for 3-4 minutes until browned. Remove and set aside.
  5. In the same skillet, add chopped onion and sauté for 3-4 minutes until translucent.
  6. Add minced garlic and cook for an additional minute.
  7. Stir in sliced carrots, celery, and bell pepper, sautéing for about 5 minutes until softened.
  8. Return the seared beef to the skillet.
  9. Pour in beef broth and add diced tomatoes with juice.
  10. Stir in Worcestershire sauce, dried thyme, paprika, and bay leaf. Mix well.
  11. Bring the mixture to a gentle boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours, checking occasionally. Add more broth or water if it thickens too much.
  12. Remove the bay leaf. Taste and adjust seasoning with salt and pepper.
  13. For a thicker sauce, mix 1 tablespoon cornstarch with 2 tablespoons cold water, stir into the sauce, and simmer for an additional 5-10 minutes.
  14. Serve hot over mashed potatoes, rice, or egg noodles. Garnish with freshly chopped parsley.
  15. Let any leftovers cool completely before transferring to an airtight container for storage.
