- 1 cup fresh strawberries, hulled and sliced
- 2 tablespoons granulated sugar
- 1/4 cup heavy cream, very cold
- 1/4 cup milk (whole or 2%), very cold
- 1/2 teaspoon vanilla extract
- Pinch of salt
- 4 cups coarsely ground coffee (medium-dark roast recommended)
- 16 cups cold, filtered water
- Ice cubes
- Optional: Strawberry slices for garnish
Instructions
- Combine Coffee and Water: In a large container, combine the coarsely ground coffee and cold, filtered water. Ensure all grounds are saturated. Stir gently.
- Steep in the Refrigerator: Cover and refrigerate for 18-24 hours.
- Strain the Coffee: Strain using cheesecloth, a coffee filter, or a French press.
- Second Strain (Optional): For extra smoothness, strain again.
- Store the Concentrate: Transfer to an airtight container and refrigerate for up to two weeks.
- Prepare the Strawberries: In a small saucepan, combine sliced strawberries and sugar.
- Cook the Strawberries: Cook over medium heat, stirring occasionally, until strawberries soften and release juices (5-7 minutes).
- Puree the Strawberries: Remove from heat, let cool slightly, then puree until smooth.
- Strain the Strawberry Puree (Optional): Strain through a fine-mesh sieve for smoother foam.
- Chill the Strawberry Puree: Refrigerate for at least 30 minutes.
- Combine Ingredients: In a chilled bowl, combine chilled strawberry puree, heavy cream, milk, vanilla extract, and salt.
- Whip the Foam: Using an electric mixer, whip on medium-high speed until stiff peaks form. Be careful not to overwhip.
- Prepare Your Glass: Fill a glass with ice cubes.
- Add Cold Brew: Pour cold brew concentrate over ice (about 2/3 full). Dilute with water or milk if desired (1:1 ratio recommended).
- Spoon on the Strawberry Foam: Gently spoon strawberry foam over the cold brew.
- Garnish (Optional): Garnish with fresh strawberry slices.
- Serve Immediately: Enjoy!
