Instructions

  3. Strain the Coffee: Strain using cheesecloth, a coffee filter, or a French press.
  4. Second Strain (Optional): For extra smoothness, strain again.
  5. Store the Concentrate: Transfer to an airtight container and refrigerate for up to two weeks.
  6. Prepare the Strawberries: In a small saucepan, combine sliced strawberries and sugar.
  7. Cook the Strawberries: Cook over medium heat, stirring occasionally, until strawberries soften and release juices (5-7 minutes).
  8. Puree the Strawberries: Remove from heat, let cool slightly, then puree until smooth.
  9. Strain the Strawberry Puree (Optional): Strain through a fine-mesh sieve for smoother foam.
  10. Chill the Strawberry Puree: Refrigerate for at least 30 minutes.
  11. Combine Ingredients: In a chilled bowl, combine chilled strawberry puree, heavy cream, milk, vanilla extract, and salt.
  12. Whip the Foam: Using an electric mixer, whip on medium-high speed until stiff peaks form. Be careful not to overwhip.
