- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 tablespoon olive oil
- 3/4 cup warm water
- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup feta cheese, crumbled
- 1 clove garlic, minced
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1 tablespoon fresh lemon juice
- Olive oil for brushing
Instructions
- In a large mixing bowl, combine the all-purpose flour, salt, and baking powder. Whisk together to aerate.
- Make a well in the center and add olive oil and warm water. Mix with a fork until a shaggy dough forms.
- Transfer to a floured surface and knead for 5-7 minutes until smooth and elastic. Add flour if too sticky.
- Shape into a ball, place in an oiled bowl, cover, and let rest for at least 30 minutes.
- In a skillet, heat olive oil and sauté minced garlic for 1 minute. Add chopped spinach and cook until wilted, about 3-4 minutes. Remove from heat and cool slightly.
- In a bowl, mix ricotta, mozzarella, feta, black pepper, red pepper flakes (if using), and lemon juice until combined.
- Squeeze excess moisture from the spinach and add to the cheese mixture. Stir well.
- Divide the rested dough into 4 portions. Roll each into a circle about 1/8 inch thick.
- Preheat a skillet over medium heat. Optionally grease with olive oil.
- Place 1/4 cup filling in the center of each dough circle. Fold over to create a half-moon and seal edges.
- Cook flatbreads in the skillet for 3-4 minutes on each side until golden brown and crispy.
- Remove from skillet, place on paper towels, and brush with olive oil.
- Serve warm with yogurt or dipping sauce.
Notes
- Ensure to squeeze out excess moisture from the spinach to prevent a watery filling.
- You can customize the filling by adding herbs or other vegetables as desired.
- These flatbreads can be made ahead of time and reheated in a skillet or oven.
