  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 tablespoon olive oil
  • 3/4 cup warm water
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup feta cheese, crumbled
  • 1 clove garlic, minced
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon fresh lemon juice
  • Olive oil for brushing

Instructions

  1. In a large mixing bowl, combine the all-purpose flour, salt, and baking powder. Whisk together to aerate.
  2. Make a well in the center and add olive oil and warm water. Mix with a fork until a shaggy dough forms.
  3. Transfer to a floured surface and knead for 5-7 minutes until smooth and elastic. Add flour if too sticky.
  4. Shape into a ball, place in an oiled bowl, cover, and let rest for at least 30 minutes.
  5. In a skillet, heat olive oil and sauté minced garlic for 1 minute. Add chopped spinach and cook until wilted, about 3-4 minutes. Remove from heat and cool slightly.
  6. In a bowl, mix ricotta, mozzarella, feta, black pepper, red pepper flakes (if using), and lemon juice until combined.
  7. Squeeze excess moisture from the spinach and add to the cheese mixture. Stir well.
  8. Divide the rested dough into 4 portions. Roll each into a circle about 1/8 inch thick.
  9. Preheat a skillet over medium heat. Optionally grease with olive oil.
  10. Place 1/4 cup filling in the center of each dough circle. Fold over to create a half-moon and seal edges.
  11. Cook flatbreads in the skillet for 3-4 minutes on each side until golden brown and crispy.
  12. Remove from skillet, place on paper towels, and brush with olive oil.
  13. Serve warm with yogurt or dipping sauce.

  • Ensure to squeeze out excess moisture from the spinach to prevent a watery filling.
  • You can customize the filling by adding herbs or other vegetables as desired.
