  • 4 cups chicken or vegetable broth

  • 1 tablespoon sesame oil
  • 1 cup bok choy, chopped
  • 1 cup mushrooms, sliced (shiitake or button mushrooms work well)
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds (for garnish)
  • 1 lime, cut into wedges (for serving)

Instructions

  1. Rinse the shrimp under cold water and pat dry with a paper towel. Toss the shrimp with 1 tablespoon of soy sauce and 1 tablespoon of sriracha in a medium bowl. Set aside to marinate for 10-15 minutes.
  2. In a large pot, heat 2 tablespoons of vegetable oil over medium heat. Add minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant. Pour in the chicken or vegetable broth and bring to a gentle simmer. Stir in the miso paste until dissolved, then add the remaining tablespoon of soy sauce and sriracha, adjusting spice levels to taste.
  3. In a separate pot, bring water to a boil and cook the ramen noodles according to package instructions (about 3-4 minutes). Drain and rinse under cold water. In the simmering broth, add chopped bok choy and sliced mushrooms, cooking for 3-4 minutes until tender.
  4. In a skillet, heat 1 tablespoon of sesame oil over medium-high heat. Add the marinated shrimp in a single layer and cook for 2-3 minutes on one side until pink and opaque. Flip and cook for an additional 1-2 minutes. Remove from heat.
  5. Divide the cooked ramen noodles among serving bowls. Ladle the hot broth with bok choy and mushrooms over the noodles. Top each bowl with cooked shrimp, garnish with sliced green onions and sesame seeds.
  6. Serve hot with lime wedges on the side for squeezing over the ramen. Offer additional sriracha for those who want extra heat.
