  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Fill a large pot with water and add a generous pinch of salt. Bring to a rolling boil over high heat.
  2. Add the fettuccine pasta to the boiling water. Stir gently to prevent sticking and cook according to package instructions (8-10 minutes) until al dente.
  3. Reserve about 1 cup of pasta water, then drain the pasta in a colander and set aside.
  4. Pat the shrimp dry with paper towels and season with salt, pepper, and Italian seasoning.
  5. In a large skillet, heat olive oil over medium-high heat.
  6. Add the shrimp in a single layer and cook for 2-3 minutes on one side until pink and opaque. Flip and cook for another 1-2 minutes. Remove from skillet and set aside.
  7. In the same skillet, reduce heat to medium and add minced garlic. Sauté for about 30 seconds until fragrant.
  8. Pour in the heavy cream, stirring to combine. Simmer gently for 2-3 minutes until slightly thickened.
  9. Gradually whisk in the grated Parmesan cheese until melted and creamy. Adjust consistency with reserved pasta water if needed.
  10. Add remaining Italian seasoning, and adjust with salt and pepper. Stir in lemon juice if desired.
  11. Toss the drained fettuccine into the skillet, coating it evenly with the Alfredo sauce.
  12. Add the cooked shrimp back into the skillet and toss until heated through and well combined.
  13. If the pasta seems dry, add more reserved pasta water until desired creaminess is achieved.
  14. Twirl the pasta onto plates or into bowls using tongs or a pasta fork.
  15. Sprinkle chopped parsley over the top and add extra Parmesan cheese if desired.
  16. Serve immediately while hot and creamy, pairing with a side salad or garlic bread.
