This slow-cooked round steak is tender and flavorful, simmered in a rich sauce of beef broth, tomatoes, and savory seasonings. Perfectly served over mashed potatoes or rice, its a comforting dish that will satisfy any appetite.

- 2 pounds round steak
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 cup beef broth
- 1 cup diced tomatoes (canned or fresh)
- 1 tablespoon Worcestershire sauce
- 1 tablespoon soy sauce
- 1 tablespoon balsamic vinegar
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Trim any excess fat from the round steak and cut it into bite-sized pieces. Season generously with salt and pepper.
- In a large skillet or Dutch oven, heat olive oil over medium-high heat. Sear the steak pieces in batches for 3-4 minutes on each side until browned. Remove and set aside.
- In the same skillet, sauté the chopped onion for about 5 minutes until translucent. Add minced garlic and cook for an additional 1-2 minutes.
- Pour in the beef broth, scraping the bottom of the pan to release browned bits. Add diced tomatoes, Worcestershire sauce, soy sauce, balsamic vinegar, thyme, and oregano. Stir to combine.
- Return the seared steak to the skillet, ensuring it is submerged in the sauce. Bring to a simmer, then reduce heat to low. Cover and cook for 1.5 to 2 hours until the steak is fork-tender.
- Check for tenderness after an hour. If not tender, cover and simmer for another 30 minutes.
- Taste the sauce and adjust seasoning if necessary. For a thicker sauce, simmer uncovered for an additional 10-15 minutes.
- Stir in chopped fresh parsley for added freshness.
- Serve the round steak and sauce over mashed potatoes, rice, or egg noodles. Garnish with additional parsley.
