- 4 slices of sourdough bread
- 4 ounces cream cheese, softened
- 1 cup shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 2–3 fresh jalapeños, roasted and chopped
- 2 tablespoons mayonnaise
- 2 tablespoons butter, softened
- Salt and pepper to taste
- Optional: fresh cilantro for garnish
Instructions
- Preheat your oven to 400°F (200°C). Place fresh jalapeños on a baking sheet lined with aluminum foil. Roast for 20-25 minutes, turning halfway, until skins are blistered and charred.
- Remove from the oven and let cool for 10 minutes. Peel off the charred skin, cut in half, remove seeds (if desired), and chop finely.
- In a medium bowl, combine softened cream cheese, shredded sharp cheddar, and shredded mozzarella.
- Fold in the chopped roasted jalapeños and season with salt and pepper to taste.
- In a small bowl, mix mayonnaise with a pinch of salt and pepper for spreading on the bread.
- Spread the mayonnaise mixture on one side of each slice of sourdough bread.
- On the unbuttered side of two slices, spread the cheese and jalapeño mixture generously. Top with the remaining slices, mayonnaise side facing out.
- Place a large skillet or griddle over medium heat and let it warm up.
- Place the assembled sandwiches in the skillet and cook for 4-5 minutes until golden brown and crispy.
- Gently flip the sandwiches and cook for another 4-5 minutes. Adjust heat if necessary to prevent burning.
- After 8-10 minutes total, ensure the cheese is melted and gooey before removing from the skillet.
- Let the sandwiches sit for a minute, then slice diagonally.
- Sprinkle fresh cilantro on top for added flavor and color.
- Serve with your favorite soup or salad for a delightful meal.
