- 2 cups cooked chicken, shredded
- 1 cup cream cheese, softened
- 1/2 cup ranch dressing
- 1 cup shredded cheddar cheese
- 1/2 cup green onions, chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 10–12 small flour tortillas
- Cooking spray or olive oil for brushing
- Optional: salsa, guacamole, or sour cream for serving
Instructions
- In a large mixing bowl, combine the shredded chicken, softened cream cheese, and ranch dressing. Mix until well combined and creamy.
- Add the shredded cheddar cheese, chopped green onions, garlic powder, onion powder, salt, and black pepper. Stir until evenly distributed.
- Preheat your oven to 400°F (200°C).
- Warm the tortillas by placing them in a microwave-safe dish, covering with a damp paper towel, and microwaving for about 30 seconds, or heat in a skillet over medium heat for 10-15 seconds on each side.
- Lay the warmed tortillas flat on a clean surface.
- Take about 2-3 tablespoons of the chicken filling and place it in the center of a tortilla.
- Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top.
- Repeat with the remaining tortillas and filling to make about 10-12 taquitos.
- Line a baking sheet with parchment paper or lightly grease it with cooking spray.
- Place the taquitos seam-side down on the baking sheet, spaced evenly.
- Lightly spray the tops with cooking spray or brush with olive oil.
- Bake in the preheated oven for 15-20 minutes, or until golden brown and crispy, flipping halfway through.
- Let the taquitos cool for a few minutes before serving.
- Serve with your favorite dipping sauces like salsa, guacamole, or sour cream.
- Optionally, sprinkle with additional chopped green onions or cilantro for garnish.
