These creamy chicken taquitos are a delicious combination of shredded chicken, cream cheese, and ranch dressing, all wrapped in crispy tortillas. Ideal for appetizers or a fun dinner, they are sure to please everyone!

Ingredients

Scale
  • 2 cups cooked chicken, shredded
  • 1 cup cream cheese, softened
  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1/2 cup green onions, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1012 small flour tortillas
  • Cooking spray or olive oil for brushing
  • Optional: salsa, guacamole, or sour cream for serving

Instructions

  1. In a large mixing bowl, combine the shredded chicken, softened cream cheese, and ranch dressing. Mix until well combined and creamy.
  2. Add the shredded cheddar cheese, chopped green onions, garlic powder, onion powder, salt, and black pepper. Stir until evenly distributed.
  3. Preheat your oven to 400°F (200°C).
  4. Warm the tortillas by placing them in a microwave-safe dish, covering with a damp paper towel, and microwaving for about 30 seconds, or heat in a skillet over medium heat for 10-15 seconds on each side.
  5. Lay the warmed tortillas flat on a clean surface.
  6. Take about 2-3 tablespoons of the chicken filling and place it in the center of a tortilla.
  7. Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top.
  8. Repeat with the remaining tortillas and filling to make about 10-12 taquitos.
  9. Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  10. Place the taquitos seam-side down on the baking sheet, spaced evenly.
  11. Lightly spray the tops with cooking spray or brush with olive oil.
  12. Bake in the preheated oven for 15-20 minutes, or until golden brown and crispy, flipping halfway through.
  13. Let the taquitos cool for a few minutes before serving.
  14. Serve with your favorite dipping sauces like salsa, guacamole, or sour cream.
  15. Optionally, sprinkle with additional chopped green onions or cilantro for garnish.

Notes

  • Ensure the tortillas are warmed to prevent tearing while rolling.
  • Feel free to customize the filling with additional spices or ingredients to suit your taste.
