Ingredients
Scale
- 6 cups fresh pineapple chunks, peeled and cored
- 1 ½ cups granulated sugar, adjust to taste
- 1 ½ cups freshly squeezed lemon juice (from about 8–10 lemons)
- 12 cups cold water, plus more for adjusting concentration
- 1 (12-ounce) can frozen pineapple juice concentrate, thawed
- 1 (2-liter) bottle lemon-lime soda, chilled (optional, for extra fizz)
- Fresh pineapple wedges, for garnish
- Lemon slices, for garnish
- Maraschino cherries, for garnish (optional)
- Ice cubes
- Fresh mint sprigs, for garnish (optional)
Instructions
- Blend the Pineapple: Blend pineapple chunks until completely smooth. Add a splash of water if needed, but avoid diluting the flavor.
- Strain the Pineapple Puree: Strain the pineapple puree through a fine-mesh sieve or cheesecloth-lined colander into a large bowl. Let it drain naturally.
- Measure the Pineapple Juice: Measure the strained pineapple juice. Aim for 4-5 cups. Add a little water if needed to make up the difference.
- Combine Sugar and Lemon Juice: In a large pitcher or bowl, combine sugar and lemon juice. Stir well until the sugar is completely dissolved.
- Taste and Adjust Sweetness: Taste the lemon-sugar mixture and adjust the sugar or lemon juice to your liking.
- Combine Pineapple Juice and Lemonade: Pour the strained pineapple juice into the pitcher with the lemonade. Stir well to combine.
- Add Water: Add the cold water to the pitcher. Start with 10 cups and then taste. Add the remaining 2 cups if needed.
- Stir in Pineapple Juice Concentrate: Stir in the thawed pineapple juice concentrate until fully incorporated.
- Chill the Punch: Cover the pitcher and refrigerate for at least 2 hours, or preferably overnight.
- Add Lemon-Lime Soda (Optional): Just before serving, gently stir in the chilled lemon-lime soda.
- Prepare the Glasses: Fill glasses with ice cubes.
- Pour and Garnish: Pour the pineapple lemonade tropical punch into the glasses. Garnish with fresh pineapple wedges, lemon slices, and maraschino cherries (if using). Add a sprig of fresh mint.
- Serve and Enjoy!
Notes
- For a smoother punch, avoid pressing down on the pineapple pulp while straining.
- Adjust the sweetness to your preference.
- Add other fruits like mango, papaya, or passion fruit for variations.
- Make it boozy by adding rum or vodka.
- Use sparkling water or club soda instead of lemon-lime soda for a less sweet option.
- Freeze some of the punch in ice cube trays for a super-chilled treat.
- The pineapple base and lemonade can be made a day or two in advance.
- Use canned pineapple chunks if fresh pineapple is unavailable.
- Add a pinch of cayenne pepper or fresh ginger for a spicy kick.
