Instructions

  1. Blend the Pineapple: Blend pineapple chunks until completely smooth. Add a splash of water if needed, but avoid diluting the flavor.
  2. Strain the Pineapple Puree: Strain the pineapple puree through a fine-mesh sieve or cheesecloth-lined colander into a large bowl. Let it drain naturally.
  3. Measure the Pineapple Juice: Measure the strained pineapple juice. Aim for 4-5 cups. Add a little water if needed to make up the difference.
  4. Combine Sugar and Lemon Juice: In a large pitcher or bowl, combine sugar and lemon juice. Stir well until the sugar is completely dissolved.
  5. Taste and Adjust Sweetness: Taste the lemon-sugar mixture and adjust the sugar or lemon juice to your liking.
  6. Combine Pineapple Juice and Lemonade: Pour the strained pineapple juice into the pitcher with the lemonade. Stir well to combine.
  7. Add Water: Add the cold water to the pitcher. Start with 10 cups and then taste. Add the remaining 2 cups if needed.
  8. Stir in Pineapple Juice Concentrate: Stir in the thawed pineapple juice concentrate until fully incorporated.
  9. Chill the Punch: Cover the pitcher and refrigerate for at least 2 hours, or preferably overnight.
  10. Add Lemon-Lime Soda (Optional): Just before serving, gently stir in the chilled lemon-lime soda.
  11. Prepare the Glasses: Fill glasses with ice cubes.
