  • 1 cup milk (dairy or non-dairy, such as almond, soy, or oat milk)

Instructions

  1. Prepare the Peach Syrup:
  2. Combine Sugar and Water: In a medium saucepan, combine the granulated sugar and water. Place the saucepan over medium heat.
  3. Dissolve the Sugar: Stir the mixture constantly until the sugar is completely dissolved.
  4. Add the Peaches: Add the chopped peaches to the saucepan. Bring the mixture to a gentle simmer.
  5. Simmer and Cook: Reduce the heat to low and let the mixture simmer for about 15-20 minutes, or until the peaches are soft and have released their flavor. Stir occasionally to prevent sticking. The mixture should thicken slightly.
  6. Add Lemon Juice: Stir in the lemon juice.
  7. Strain the Syrup: Remove the saucepan from the heat. Carefully pour the mixture through a fine-mesh sieve into a heat-proof bowl or jar. Use a spoon to press the peaches against the sieve to extract as much syrup as possible. Discard the peach solids.
  8. Cool the Syrup: Let the peach syrup cool completely before using. You can store it in an airtight container in the refrigerator for up to 2 weeks.
  9. Cook the Tapioca Pearls (Boba):
