- 1 cup water
- 2 ripe peaches, peeled and chopped
- 1 tablespoon lemon juice
- 1/2 cup dried tapioca pearls (black or clear)
- 4 cups water, for boiling
- 2 cups brewed black tea, cooled (or green tea, if preferred)
- 1 cup milk (dairy or non-dairy, such as almond, soy, or oat milk)
- Ice cubes
- Peach slices, for garnish (optional)
Instructions
- Prepare the Peach Syrup:
- Combine Sugar and Water: In a medium saucepan, combine the granulated sugar and water. Place the saucepan over medium heat.
- Dissolve the Sugar: Stir the mixture constantly until the sugar is completely dissolved.
- Add the Peaches: Add the chopped peaches to the saucepan. Bring the mixture to a gentle simmer.
- Simmer and Cook: Reduce the heat to low and let the mixture simmer for about 15-20 minutes, or until the peaches are soft and have released their flavor. Stir occasionally to prevent sticking. The mixture should thicken slightly.
- Add Lemon Juice: Stir in the lemon juice.
- Strain the Syrup: Remove the saucepan from the heat. Carefully pour the mixture through a fine-mesh sieve into a heat-proof bowl or jar. Use a spoon to press the peaches against the sieve to extract as much syrup as possible. Discard the peach solids.
- Cool the Syrup: Let the peach syrup cool completely before using. You can store it in an airtight container in the refrigerator for up to 2 weeks.
- Cook the Tapioca Pearls (Boba):
- Boil the Water: Bring 4 cups of water to a rolling boil in a medium saucepan.
- Add the Tapioca Pearls: Once the water is boiling vigorously, add the dried tapioca pearls.
- Cook the Boba: Reduce the heat to medium and let the boba cook for the time specified on the package (usually 5-10 minutes). Stir occasionally.
- Rest the Boba: After the initial cooking time, turn off the heat, cover the saucepan, and let the boba rest in the hot water for another 10-15 minutes.
- Drain and Rinse: Drain the boba using a fine-mesh sieve. Rinse them under cold water.
- Sweeten the Boba (Optional): In a small bowl, combine 1/4 cup of the peach syrup (or a simple syrup made with equal parts sugar and water) with the cooked boba. Let them soak for at least 10 minutes before using.
- Assemble the Peach Bubble Tea:
- Prepare the Tea: Brew your black tea (or green tea) according to the package instructions. Let it cool completely.
- Add Boba to the Glass: Add about 2-3 tablespoons of cooked boba to the bottom of each glass.
- Add Ice: Fill the glass with ice cubes.
- Pour in the Tea: Pour the cooled tea over the ice. Fill the glass about halfway with tea.
- Add Peach Syrup: Add 2-3 tablespoons of peach syrup to each glass.
- Add Milk: Pour in the milk (dairy or non-dairy) to fill the glass.
- Stir Well: Use a long spoon or a bubble tea straw to stir the mixture thoroughly.
- Taste and Adjust: Taste the bubble tea and adjust the sweetness by adding more peach syrup if needed. You can also add more milk or tea to adjust the flavor balance.
- Garnish (Optional): Garnish with a slice of fresh peach, if desired.
- Serve and Enjoy: Serve immediately with a wide bubble tea straw and enjoy your homemade peach bubble tea!
