  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup plain yogurt
  • 1/2 cup passionfruit pulp (fresh or canned)
  • 1/4 cup milk
  • 1/2 cup powdered sugar
  • 2 tablespoons butter, softened
  • 1 tablespoon passionfruit pulp
  • Optional: fresh passionfruit seeds for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed for about 3-4 minutes until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Add the plain yogurt and passionfruit pulp to the butter mixture, mixing until well combined.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Start and end with the dry ingredients, mixing until just combined.
  7. Fill each cupcake liner about two-thirds full with the batter.
  8. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove from the oven and let cool in the tin for about 5 minutes before transferring to a wire rack to cool completely.
  10. In a medium bowl, beat the softened butter with an electric mixer until creamy (1-2 minutes).
  11. Gradually add the powdered sugar, mixing on low speed until combined, then increase to medium speed and beat until fluffy.
  12. Add the passionfruit pulp to the frosting and mix until well combined. Adjust sweetness if necessary.
  13. If the frosting is too thick, add a teaspoon of milk; if too thin, add more powdered sugar.
  14. Once the cupcakes are completely cool, frost them using a piping bag or a knife.
  15. If using a piping bag, fit it with a star tip and pipe frosting onto each cupcake, starting from the outside and working inward.
  16. Garnish with fresh passionfruit seeds for a pop of color and flavor.
