Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
- In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed for about 3-4 minutes until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Add the plain yogurt and passionfruit pulp to the butter mixture, mixing until well combined.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk. Start and end with the dry ingredients, mixing until just combined.
- Fill each cupcake liner about two-thirds full with the batter.
- Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let cool in the tin for about 5 minutes before transferring to a wire rack to cool completely.
- In a medium bowl, beat the softened butter with an electric mixer until creamy (1-2 minutes).
- Gradually add the powdered sugar, mixing on low speed until combined, then increase to medium speed and beat until fluffy.
- Add the passionfruit pulp to the frosting and mix until well combined. Adjust sweetness if necessary.
- If the frosting is too thick, add a teaspoon of milk; if too thin, add more powdered sugar.
- Once the cupcakes are completely cool, frost them using a piping bag or a knife.
- If using a piping bag, fit it with a star tip and pipe frosting onto each cupcake, starting from the outside and working inward.
- Garnish with fresh passionfruit seeds for a pop of color and flavor.
