A refreshing tropical drink with passion fruit, papaya, and green tea.
Ingredients

- 4 ripe passion fruits
- 2 tablespoons water
- 1 tablespoon granulated sugar (adjust to taste)
- 1 cup diced ripe papaya (about 1 small papaya)
- 1/2 cup water
- 1/2 cup granulated sugar
- 1/2 teaspoon lemon juice
- 4 green tea bags (Jasmine or Dragon Well recommended)
- 2 cups boiling water
- 1/4 cup passion fruit puree
- 1/4 cup papaya syrup
- 1/2 cup green tea concentrate (cooled)
- Ice cubes
- Optional: Fresh papaya chunks for garnish
- Optional: Passion fruit seeds for garnish
- Optional: Mint sprigs for garnish
Instructions
- Cut the passion fruits in half. Using a spoon, scoop out all the pulp and seeds into a small saucepan.
- Add the water to the saucepan. Place the saucepan over medium heat and bring the mixture to a gentle simmer. Cook for about 5-7 minutes, stirring occasionally, until the pulp softens slightly.
- Add the sugar to the saucepan and stir until it dissolves completely. Taste and adjust the sweetness as needed.
- Remove the saucepan from the heat. Place a fine-mesh sieve over a bowl. Pour the passion fruit mixture into the sieve. Use a spoon to press the pulp against the sieve, extracting as much juice as possible. Discard the seeds (or save them for garnish).
- Let the passion fruit puree cool completely before using. Store in an airtight container in the refrigerator for up to 3 days.
- In a medium saucepan, combine the diced papaya, water, sugar, and lemon juice.
- Place the saucepan over medium heat and bring the mixture to a simmer. Stir occasionally to prevent sticking.
- Reduce the heat to low and continue to simmer for about 15-20 minutes, or until the papaya is very soft and the syrup has thickened slightly.
- Use a fork or potato masher to gently mash the papaya in the saucepan.
- If you prefer a completely smooth syrup, you can strain the mixture through a fine-mesh sieve.
- Remove the saucepan from the heat and let the papaya syrup cool completely before using. Store in an airtight container in the refrigerator for up to 1 week.
- Bring 2 cups of water to a rolling boil.
- Place the green tea bags in a heatproof pitcher or container. Pour the boiling water over the tea bags.
- Let the tea steep for 3-5 minutes, depending on your preference.
- Remove the tea bags from the pitcher and discard them.
- Let the green tea concentrate cool completely before using. Refrigerate to speed up cooling.
- Fill a tall glass with ice cubes.
- Pour 1/4 cup of passion fruit puree into the glass.
- Pour 1/4 cup of papaya syrup into the glass.
- Pour 1/2 cup of cooled green tea concentrate into the glass.
- Use a long spoon to gently stir the ingredients together.
- Taste the drink and adjust the sweetness or tartness as needed.
- Garnish the drink with fresh papaya chunks, passion fruit seeds, and/or a mint sprig.
- Serve the Passion Papaya Green Tea immediately and enjoy!
Notes
- Adjust sweetness: Adjust sugar in puree and syrup to your liking. Use sugar substitutes if preferred.
- Green Tea Variations: Experiment with different green tea types (Jasmine, Dragon Well recommended).
