  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 1/2 cup grated Parmesan cheese
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Pat the chicken breasts dry with paper towels. In a small bowl, mix together salt, black pepper, garlic powder, onion powder, paprika, thyme, and oregano. Rub the seasoning mixture all over the chicken breasts.
  2. In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and cover with aluminum foil to keep warm.
  3. In the same skillet, reduce heat to medium and add chicken broth, scraping up any browned bits from the bottom. Simmer for 2-3 minutes. Pour in heavy cream, stir, and bring to a gentle simmer for about 5 minutes, stirring occasionally.
  4. Add halved cherry tomatoes and fresh spinach to the sauce, cooking for an additional 2-3 minutes until the spinach wilts and tomatoes soften.
  5. Return the chicken to the skillet, spooning sauce over the top. Sprinkle grated Parmesan cheese over the chicken and sauce. Cover and cook on low heat for another 2-3 minutes until the cheese melts.
  6. Remove from heat and garnish with fresh basil leaves if desired. Serve hot, spooning the creamy sauce over the chicken.

  • Avoid overcrowding the skillet when cooking the chicken; cook in batches if necessary.
