This One Pot Chicken Skillet features tender chicken breasts in a creamy sauce with cherry tomatoes and fresh spinach, making it a flavorful and nutritious meal that’s easy to prepare any night of the week.

- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach
- 1/2 cup grated Parmesan cheese
- Fresh basil leaves for garnish (optional)
Instructions
- Pat the chicken breasts dry with paper towels. In a small bowl, mix together salt, black pepper, garlic powder, onion powder, paprika, thyme, and oregano. Rub the seasoning mixture all over the chicken breasts.
- In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and cover with aluminum foil to keep warm.
- In the same skillet, reduce heat to medium and add chicken broth, scraping up any browned bits from the bottom. Simmer for 2-3 minutes. Pour in heavy cream, stir, and bring to a gentle simmer for about 5 minutes, stirring occasionally.
- Add halved cherry tomatoes and fresh spinach to the sauce, cooking for an additional 2-3 minutes until the spinach wilts and tomatoes soften.
- Return the chicken to the skillet, spooning sauce over the top. Sprinkle grated Parmesan cheese over the chicken and sauce. Cover and cook on low heat for another 2-3 minutes until the cheese melts.
- Remove from heat and garnish with fresh basil leaves if desired. Serve hot, spooning the creamy sauce over the chicken.
Notes
- Avoid overcrowding the skillet when cooking the chicken; cook in batches if necessary.
- Customize the vegetables in the sauce; zucchini, bell peppers, or mushrooms are great alternatives.
- For a spicy kick, add a pinch of red pepper flakes to the sauce.
