- 2 cups rolled oats
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup chocolate chips (or raisins, if you prefer)
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×13 inch baking pan with butter or line it with parchment paper.
- In a medium bowl, whisk together rolled oats, all-purpose flour, baking soda, salt, and ground cinnamon.
- In a large mixing bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).
- Mix in the egg and vanilla extract until well combined.
- Gradually add the dry mixture to the wet ingredients in three parts, mixing on low speed until just combined.
- Gently fold in chocolate chips and chopped nuts (if using).
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
- Let the bars cool in the pan for 10-15 minutes.
- Cut into squares or rectangles, about 12-16 pieces.
- Lift the bars out of the pan using parchment paper or a spatula and transfer to a wire rack to cool completely.
- Store in an airtight container at room temperature for up to a week or freeze for longer storage.
- Serve plain or with a scoop of ice cream for a delightful treat!
