  • 1/2 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips (or raisins, if you prefer)
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13 inch baking pan with butter or line it with parchment paper.
  3. In a medium bowl, whisk together rolled oats, all-purpose flour, baking soda, salt, and ground cinnamon.
  4. In a large mixing bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).
  5. Mix in the egg and vanilla extract until well combined.
  6. Gradually add the dry mixture to the wet ingredients in three parts, mixing on low speed until just combined.
  7. Gently fold in chocolate chips and chopped nuts (if using).
  8. Pour the batter into the prepared baking pan and spread it evenly.
  9. Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
  10. Let the bars cool in the pan for 10-15 minutes.
  11. Cut into squares or rectangles, about 12-16 pieces.
  12. Lift the bars out of the pan using parchment paper or a spatula and transfer to a wire rack to cool completely.
  13. Store in an airtight container at room temperature for up to a week or freeze for longer storage.
