  • 5 tablespoons unsalted butter, melted
  • ¼ cup granulated sugar
  • Pinch of salt
  • 16 ounces (2 cups) Nutella
  • 8 ounces cream cheese, softened
  • 1 cup heavy cream
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 4 ounces semi-sweet chocolate, finely chopped
  • ½ cup heavy cream
  • Chopped hazelnuts
  • Chocolate shavings

Instructions

  1. If using whole chocolate wafers, crush them into fine crumbs using a food processor or by placing them in a resealable bag and crushing with a rolling pin.
  2. In a medium bowl, combine the chocolate wafer crumbs, melted butter, granulated sugar, and a pinch of salt. Mix well until evenly moistened.
  3. Transfer the crumb mixture to a 9-inch pie plate. Press firmly and evenly across the bottom and up the sides.
  4. Cover and refrigerate for at least 30 minutes (or freeze for 15 minutes).
  5. Ensure cream cheese is softened.
  6. In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Add the Nutella and beat until well combined.
  7. In a separate bowl, whip the heavy cream with an electric mixer until stiff peaks form.
  8. Gradually add the powdered sugar and vanilla extract to the whipped cream, beating until just combined.
  9. Gently fold the whipped cream into the Nutella mixture in two additions.
  10. Add a pinch of salt.
  11. Remove the chilled crust from the refrigerator.
  12. Pour the Nutella filling into the crust, spreading it evenly.
  13. Smooth the top of the filling.
  14. Cover and refrigerate for at least 4 hours, or preferably overnight.
  15. Finely chop the semi-sweet chocolate and place it in a heatproof bowl.
  16. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.
  17. Pour the hot heavy cream over the chopped chocolate. Let it sit for a minute.
  18. Stir until the chocolate is completely melted and the ganache is smooth and glossy.
  19. Let the ganache cool slightly for 10-15 minutes.
  20. Pour the slightly cooled ganache over the chilled Nutella pie, spreading it evenly.
  21. Chill for another 30 minutes to allow the ganache to set.
  22. Sprinkle chopped hazelnuts and/or chocolate shavings over the top of the pie.
  23. Other options: whipped cream, fresh berries, or cocoa powder.
  24. Slice and serve.
  25. Store any leftover pie in the refrigerator, covered, for up to 3 days.
