  • 4 bone-in pork chops (about 1 inch thick)
  • 1/4 cup Dijon mustard
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried rosemary)
  • 1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried thyme)
  • Salt and pepper, to taste
  • 1 tablespoon apple cider vinegar
  • 1/4 cup chicken broth (optional, for deglazing)

Instructions

  1. In a medium-sized bowl, combine the Dijon mustard, honey, olive oil, minced garlic, chopped rosemary, chopped thyme, salt, pepper, and apple cider vinegar. Whisk until smooth. Taste and adjust seasoning if necessary.
  2. Place the pork chops in a large resealable plastic bag or shallow dish. Pour the marinade over the pork chops, ensuring they are well coated. Seal the bag or cover the dish with plastic wrap.
  3. Refrigerate the pork chops for at least 30 minutes, preferably 2 to 4 hours for best results.
  4. Preheat your grill or stovetop grill pan over medium-high heat. Oil the grates if using a grill.
  5. Remove the pork chops from the marinade, allowing excess marinade to drip off. Discard the leftover marinade.
  6. Season the pork chops with extra salt and pepper on both sides.
  7. Place the pork chops on the grill or grill pan. Cook for about 4 to 5 minutes on one side without moving them.
  8. Flip the pork chops and cook for another 4 to 5 minutes on the other side, until the internal temperature reaches 145°F (63°C).
  9. For added flavor, deglaze the pan with chicken broth after removing the pork chops, scraping up any browned bits.
  10. Let the pork chops rest on a cutting board for about 5 minutes.
  11. Prepare any side dishes while the pork chops rest. Slice the pork chops against the grain and arrange on a serving platter. Drizzle with deglazed sauce if made.
  12. Garnish with additional fresh herbs for color and flavor.
