- 4 bone-in pork chops (about 1 inch thick)
- 1/4 cup Dijon mustard
- 2 tablespoons honey
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried rosemary)
- 1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried thyme)
- Salt and pepper, to taste
- 1 tablespoon apple cider vinegar
- 1/4 cup chicken broth (optional, for deglazing)
Instructions
- In a medium-sized bowl, combine the Dijon mustard, honey, olive oil, minced garlic, chopped rosemary, chopped thyme, salt, pepper, and apple cider vinegar. Whisk until smooth. Taste and adjust seasoning if necessary.
- Place the pork chops in a large resealable plastic bag or shallow dish. Pour the marinade over the pork chops, ensuring they are well coated. Seal the bag or cover the dish with plastic wrap.
- Refrigerate the pork chops for at least 30 minutes, preferably 2 to 4 hours for best results.
- Preheat your grill or stovetop grill pan over medium-high heat. Oil the grates if using a grill.
- Remove the pork chops from the marinade, allowing excess marinade to drip off. Discard the leftover marinade.
- Season the pork chops with extra salt and pepper on both sides.
- Place the pork chops on the grill or grill pan. Cook for about 4 to 5 minutes on one side without moving them.
- Flip the pork chops and cook for another 4 to 5 minutes on the other side, until the internal temperature reaches 145°F (63°C).
- For added flavor, deglaze the pan with chicken broth after removing the pork chops, scraping up any browned bits.
- Let the pork chops rest on a cutting board for about 5 minutes.
- Prepare any side dishes while the pork chops rest. Slice the pork chops against the grain and arrange on a serving platter. Drizzle with deglazed sauce if made.
- Garnish with additional fresh herbs for color and flavor.

- Bone-in pork chops are juicier and more flavorful than boneless.
- Marinate overnight for the best flavor.
- If grilling isnt an option, you can cook the chops in a skillet or bake them at 400°F (200°C) for 20-25 minutes.
