Ingredients

Scale
  • 1 cup fresh mint leaves, packed
  • 1 cup granulated sugar
  • 1 cup freshly squeezed lemon juice (about 46 lemons)
  • 4 cups cold water
  • Ice cubes
  • Mint sprigs for garnish
  • Lemon slices for garnish

Instructions

  1. In a small saucepan, combine 1 cup of granulated sugar and 1 cup of water. Place the saucepan over medium heat.
  2. Stir the mixture until the sugar completely dissolves (about 2-3 minutes).
  3. Add the packed mint leaves to the saucepan.
  4. Bring the mixture to a gentle simmer and let it simmer for about 5 minutes.
  5. Remove the saucepan from heat and let the mint syrup cool to room temperature.
  6. Strain the syrup through a fine-mesh sieve into a bowl or jar to remove the mint leaves. Press the leaves gently to extract as much flavor as possible.
  7. Set the mint syrup aside.
  8. Roll each lemon on the countertop with your palm to soften them.
  9. Cut the lemons in half and use a citrus juicer or reamer to extract the juice, removing any seeds.
  10. Measure out 1 cup of freshly squeezed lemon juice.
  11. In a large pitcher, combine the mint syrup and the freshly squeezed lemon juice.
  12. Add 4 cups of cold water to the pitcher and stir well.
  13. Taste the lemonade and adjust the sweetness or tartness as desired.
  14. Refrigerate the lemonade for at least 30 minutes to chill.
  15. Fill tall glasses with ice cubes.
  16. Pour the chilled mint lemonade over the ice, filling each glass about three-quarters full.
  17. Garnish with a sprig of fresh mint and a slice of lemon on the rim.
  18. Serve immediately and enjoy!
