  • 1 cup glutinous rice (also known as sticky rice or sweet rice)
  • 1 ½ cups coconut milk
  • ½ cup granulated sugar
  • ½ teaspoon salt
  • 2 ripe mangoes, peeled and sliced
  • Sesame seeds or mung beans for garnish (optional)

Instructions

  1. Rinse the glutinous rice under cold water until the water runs clear to remove excess starch.
  2. Transfer the rice to a bowl, cover with water, and soak for at least 4 hours or overnight.
  3. After soaking, drain the rice in a colander.
  4. Fill a pot with water and bring it to a boil. Line a bamboo steamer with cheesecloth or use a metal steamer basket.
  5. Place the drained rice in the steamer, cover, and steam for 25-30 minutes until translucent and sticky.
  6. Remove the rice from the steamer, let it cool for a few minutes, then fluff gently with a fork.
  7. In a saucepan, mix coconut milk, sugar, and salt.
  8. Heat over medium until it simmers, stirring occasionally until the sugar dissolves.
  9. Set aside ½ cup of the coconut sauce for drizzling later.
  10. Pour the remaining sauce over the steamed rice and stir gently. Let it sit for 15-20 minutes to absorb flavors.
  11. Peel and slice the ripe mangoes into thin wedges.
  12. Place the mango slices on a serving plate.
  13. Place a portion of sticky rice on the plate next to the mango slices.
  14. Drizzle the reserved coconut sauce over the sticky rice.
  15. Optionally, sprinkle toasted sesame seeds or mung beans on top.
  16. Enjoy the dish warm or at room temperature for the best flavor.
