Mango Sticky Rice is a traditional Thai dessert that combines sweet, creamy glutinous rice with ripe mango slices, all drizzled with a rich coconut sauce. This dish offers a delightful mix of flavors and textures, making it a beloved treat for any occasion.

- 1 cup glutinous rice (also known as sticky rice or sweet rice)
- 1 ½ cups coconut milk
- ½ cup granulated sugar
- ½ teaspoon salt
- 2 ripe mangoes, peeled and sliced
- Sesame seeds or mung beans for garnish (optional)
Instructions
- Rinse the glutinous rice under cold water until the water runs clear to remove excess starch.
- Transfer the rice to a bowl, cover with water, and soak for at least 4 hours or overnight.
- After soaking, drain the rice in a colander.
- Fill a pot with water and bring it to a boil. Line a bamboo steamer with cheesecloth or use a metal steamer basket.
- Place the drained rice in the steamer, cover, and steam for 25-30 minutes until translucent and sticky.
- Remove the rice from the steamer, let it cool for a few minutes, then fluff gently with a fork.
- In a saucepan, mix coconut milk, sugar, and salt.
- Heat over medium until it simmers, stirring occasionally until the sugar dissolves.
- Set aside ½ cup of the coconut sauce for drizzling later.
- Pour the remaining sauce over the steamed rice and stir gently. Let it sit for 15-20 minutes to absorb flavors.
- Peel and slice the ripe mangoes into thin wedges.
- Place the mango slices on a serving plate.
- Place a portion of sticky rice on the plate next to the mango slices.
- Drizzle the reserved coconut sauce over the sticky rice.
- Optionally, sprinkle toasted sesame seeds or mung beans on top.
- Enjoy the dish warm or at room temperature for the best flavor.
- Dig in and savor the sweet, creamy combination of coconut rice and juicy mango.
- Store any leftovers in airtight containers in the refrigerator for 2-3 days.
