Ingredients
Scale
- 2 ripe mangoes, peeled and diced
- 1/4 cup fresh lime juice (about 2–3 limes)
- 1 tablespoon lime zest
- 1/2 cup granulated sugar
- 1 cup heavy whipping cream
- 1 teaspoon vanilla extract
- 1 packet (about 2 1/4 teaspoons) unflavored gelatin
- 2 tablespoons cold water
- Fresh mint leaves for garnish (optional)
Instructions
- Start by preparing the mangoes. Peel the mangoes and cut them into small chunks.
- Place the mango chunks in a blender or food processor. Add the fresh lime juice and lime zest.
- Blend until smooth. Taste and adjust sweetness with sugar if needed.
- Transfer the mango puree to a bowl and set aside.
- In a small bowl, sprinkle the unflavored gelatin over the cold water. Let it sit for about 5 minutes to bloom.
- Microwave the bloomed gelatin for 10-15 seconds until warm, then stir until dissolved.
- Add a couple of tablespoons of mango puree to the gelatin mixture to temper it, then mix it back into the remaining mango puree.
- In a cold mixing bowl, pour in the heavy whipping cream.
- Add the granulated sugar and vanilla extract. Beat on medium-high speed until soft peaks form (about 3-5 minutes).
- Gently fold in the mango puree mixture in batches to maintain the airy texture.
- Transfer the mousse into serving dishes, filling them about three-quarters full.
- Cover with plastic wrap or lids and refrigerate for at least 4 hours, or overnight.
- When ready to serve, remove the mousse from the refrigerator.
- Garnish with fresh mint leaves if desired, and enjoy!
