Ingredients

  • 2 ripe mangoes, peeled and cubed
  • 1 tablespoon lime juice
  • 1 tablespoon water (optional, for smoother consistency)
  • 1 cup frozen or fresh dragonfruit chunks (pink or white variety)
  • 1 cup granulated sugar
  • 1 cup water
  • 1 teaspoon lemon juice
  • 1 cup freshly squeezed lemon juice (about 68 lemons)
  • 4 cups cold water
  • ½ cup granulated sugar (adjust to taste)
  • Ice cubes
  • Fresh mango slices, for garnish (optional)
  • Dragonfruit chunks, for garnish (optional)
  • Lemon slices, for garnish (optional)
  • Mint sprigs, for garnish (optional)

Instructions

  1. Peel and cube your mangoes.
  2. Place the cubed mangoes, lime juice, and optional water into a blender or food processor.
  3. Blend until you have a smooth puree. If it’s too thick, add a tablespoon of water at a time until you reach your desired consistency.
  4. Give it a taste! If it’s not sweet enough for you, you can add a tiny bit of sugar or honey. If it’s too sweet, add a little more lime juice.
  5. Once you’re happy with the flavor and consistency, set the mango puree aside.
  6. In a medium saucepan, combine the dragonfruit chunks, granulated sugar, and water.
  7. Place the saucepan over medium heat and bring the mixture to a simmer, stirring occasionally until the sugar is completely dissolved.
  8. Once the sugar is dissolved, reduce the heat to low and let the syrup simmer for about 15-20 minutes, or until it has thickened slightly.
  9. Stir in the lemon juice.
  10. Remove the saucepan from the heat and let the syrup cool completely. Once cooled, strain the syrup through a fine-mesh sieve to remove any seeds or pulp.
  11. Store the dragonfruit syrup in an airtight container in the refrigerator. It will keep for up to 2 weeks.
  12. Juice your lemons until you have 1 cup of fresh lemon juice.
  13. In a large pitcher, combine the lemon juice, cold water, and granulated sugar.
  14. Stir well until the sugar is completely dissolved.
  15. Taste the lemonade and adjust the sweetness to your liking. If it’s too tart, add more sugar. If it’s too sweet, add more lemon juice.
  16. Chill the lemonade in the refrigerator for at least 30 minutes before serving.
  17. Fill your glasses with ice cubes.
  18. Spoon about 2-3 tablespoons of mango puree into the bottom of each glass. Adjust the amount to your preference.
  19. Pour about 1-2 ounces of dragonfruit syrup over the mango puree. Again, adjust to your liking.
  20. Fill the rest of the glass with the chilled lemonade.
  21. Stir gently to combine the mango puree, dragonfruit syrup, and lemonade.
  22. Garnish with fresh mango slices, dragonfruit chunks, lemon slices, and mint sprigs, if desired.
  23. Serve immediately and enjoy!

Notes

  • Adjust the sweetness of the lemonade to your liking by modifying the amount of sugar in the dragonfruit syrup and lemonade.
  • Experiment with other fruits like strawberry, raspberry, or pineapple.
  • Make it sparkling by substituting cold water with sparkling water or club soda.
  • Add a shot of vodka, rum, or tequila for an adult version.
  • Make the mango puree and dragonfruit syrup ahead of time and store them in the refrigerator.
