- 1 large head of broccoli, cut into florets
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese, plus more for serving
- 2 tablespoons lemon juice, freshly squeezed
- 1 teaspoon lemon zest
- 1/4 teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- 1/4 cup toasted pine nuts (optional, for garnish)
Instructions
- Prepare the Broccoli: Wash broccoli thoroughly. Cut into florets, peeling and chopping the stalk. Blanch in boiling salted water for 3-4 minutes until vibrant green and slightly tender. Immediately transfer to an ice bath to stop cooking. Drain well and pat dry.
- Roast the Broccoli: Preheat oven to 400°F (200°C). In a large bowl, whisk together olive oil, minced garlic, Parmesan cheese, lemon juice, lemon zest, and red pepper flakes (if using). Add blanched broccoli florets and toss to coat evenly.
- Spread broccoli in a single layer on a parchment-lined baking sheet. Roast for 15-20 minutes, or until tender-crisp and slightly browned, tossing halfway through.
- Serve: Transfer roasted broccoli to a serving dish. Season with salt and pepper to taste. Sprinkle with additional Parmesan cheese and toasted pine nuts (if using). Serve immediately.
