  • 2 large eggs
  • 1/4 cup milk
  • 1/4 cup olive oil
  • 1/4 cup unsalted butter
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • Zest of 1 lemon
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Place the chicken breasts between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, gently pound the chicken to an even thickness of about 1/2 inch.
  2. Season both sides of the chicken breasts with salt and black pepper.
  3. In a shallow dish, combine the flour, grated Romano cheese, garlic powder, onion powder, salt, and black pepper. Mix well.
  4. In another shallow bowl, whisk together the eggs and milk until well combined.
  5. Dip each chicken breast into the egg wash, allowing excess to drip off, then dredge in the flour and cheese mixture, pressing gently to adhere. Place the breaded chicken on a plate.
  6. In a large skillet, heat the olive oil and butter over medium heat until the butter melts and starts to bubble.
  7. Add the breaded chicken breasts to the skillet, cooking in batches if necessary. Cook for about 4-5 minutes on each side, or until golden brown and cooked through.
  8. Transfer the cooked chicken to a plate lined with paper towels to absorb excess oil.
  9. In the same skillet, reduce the heat to low and add the fresh lemon juice and lemon zest. Scrape up any browned bits from the bottom of the pan.
