- 1/4 cup milk
- 1/4 cup olive oil
- 1/4 cup unsalted butter

Instructions
- Place the chicken breasts between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, gently pound the chicken to an even thickness of about 1/2 inch.
- Season both sides of the chicken breasts with salt and black pepper.
- In a shallow dish, combine the flour, grated Romano cheese, garlic powder, onion powder, salt, and black pepper. Mix well.
- In another shallow bowl, whisk together the eggs and milk until well combined.
- Dip each chicken breast into the egg wash, allowing excess to drip off, then dredge in the flour and cheese mixture, pressing gently to adhere. Place the breaded chicken on a plate.
- In a large skillet, heat the olive oil and butter over medium heat until the butter melts and starts to bubble.
- Add the breaded chicken breasts to the skillet, cooking in batches if necessary. Cook for about 4-5 minutes on each side, or until golden brown and cooked through.
- Transfer the cooked chicken to a plate lined with paper towels to absorb excess oil.
- In the same skillet, reduce the heat to low and add the fresh lemon juice and lemon zest. Scrape up any browned bits from the bottom of the pan.
- Allow the lemon juice to simmer for about 2-3 minutes to reduce slightly. Adjust seasoning if necessary.
- To serve, place a piece of chicken on each plate and drizzle with the lemon sauce. Garnish with chopped fresh parsley.
