Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium mixing bowl, combine 1 cup of all-purpose flour, 1/4 cup of powdered sugar, and 1/4 teaspoon of salt. Whisk until well mixed.
  3. Add 1/2 cup of softened unsalted butter and mix until it resembles coarse crumbs.
  4. Press the mixture firmly into the bottom of an 8×8-inch baking dish.
  5. Bake for 15-20 minutes, or until lightly golden.
  6. In a large mixing bowl, whisk together 1 cup of granulated sugar and 2 large eggs until smooth and frothy.
  7. Add 1/4 cup of lemon juice and 1 tablespoon of lemon zest.
  8. Sprinkle in 1/4 cup of flour and 1/2 teaspoon of baking powder, folding gently until just combined.
  9. Remove the crust from the oven and let it cool for 5 minutes.
  10. Pour the lemon filling over the warm crust and spread evenly.
