- 2 large eggs

- 1 tablespoon lemon zest (from about 1 lemon)
- 1/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium mixing bowl, combine 1 cup of all-purpose flour, 1/4 cup of powdered sugar, and 1/4 teaspoon of salt. Whisk until well mixed.
- Add 1/2 cup of softened unsalted butter and mix until it resembles coarse crumbs.
- Press the mixture firmly into the bottom of an 8×8-inch baking dish.
- Bake for 15-20 minutes, or until lightly golden.
- In a large mixing bowl, whisk together 1 cup of granulated sugar and 2 large eggs until smooth and frothy.
- Add 1/4 cup of lemon juice and 1 tablespoon of lemon zest.
- Sprinkle in 1/4 cup of flour and 1/2 teaspoon of baking powder, folding gently until just combined.
- Remove the crust from the oven and let it cool for 5 minutes.
- Pour the lemon filling over the warm crust and spread evenly.
- Bake for an additional 20-25 minutes, or until the filling is set.
- Let the lemon bars cool in the baking dish for 30 minutes.
- Cover with plastic wrap and refrigerate for at least 2 hours.
- Cut into squares or rectangles and dust with powdered sugar if desired.
