Savor a quick and tasty Korean Ground Beef Bowl, featuring seasoned ground beef in a savory sauce, served over rice with steamed vegetables. Ideal for busy weeknights or meal prep!

Ingredients

Scale
  • 1 pound ground beef (preferably 80/20 for flavor)
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 2 green onions, chopped (for garnish)
  • 1 cup cooked rice (white or brown, your choice)
  • 1 cup steamed broccoli (or any vegetable of your choice)
  • Sesame seeds (for garnish)

Instructions

  1. In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the minced garlic and ginger. Sauté for about 30 seconds until fragrant, being careful not to burn them.
  2. Add the ground beef to the skillet. Use a spatula to break it apart as it cooks. Stir occasionally, cooking until the beef is browned and no longer pink, about 5-7 minutes.
  3. Drain any excess fat from the skillet to keep the dish from becoming too greasy.
  4. Reduce the heat to medium and add the soy sauce, brown sugar, sesame oil, rice vinegar, and red pepper flakes. Stir well to combine, allowing the flavors to meld together. Cook for an additional 2-3 minutes, stirring occasionally.
  5. While the beef mixture is cooking, prepare your rice according to package instructions. If using leftover rice, ensure it’s heated through before serving.
  6. If cooking rice from scratch, rinse 1 cup of rice under cold water until the water runs clear to remove excess starch.
  7. In a pot, combine the rinsed rice with 2 cups of water (or broth for added flavor). Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender and the water is absorbed. Fluff with a fork before serving.
  8. While the rice is cooking, steam your broccoli or any preferred vegetables. If using a steamer basket, fill a pot with a couple of inches of water, bring to a boil, and place the broccoli in the basket. Cover and steam for about 5-7 minutes until bright green and tender-crisp.
  9. Alternatively, microwave the broccoli in a microwave-safe bowl with a splash of water, covered, for about 3-4 minutes, checking for doneness.
  10. Once everything is cooked, assemble your bowls by placing a generous scoop of rice at the bottom of each bowl.
  11. Spoon the flavorful ground beef mixture over the rice, ensuring some sauce is included.
  12. Add a portion of the steamed broccoli (or chosen vegetables) on the side of the beef for color and nutrition.
  13. Sprinkle chopped green onions and sesame seeds over the top of each bowl for added flavor and visual appeal.
  14. Serve the Korean Ground Beef Bowls warm, and consider adding toppings like sliced cucumbers, pickled radishes, or a fried egg for extra richness.
  15. For heat, drizzle sriracha or gochujang (Korean chili paste) over the top.
  16. These bowls are perfect for meal prep! Store the beef mixture and rice separately for easy reheating.
