Instructions

  3. Cook to Soft-Ball Stage: Place saucepan over medium heat. Clip a candy thermometer to the side (avoiding the bottom). Cook without stirring until it reaches 235-240°F (113-116°C).
  4. Whip Egg Whites: While syrup cooks, in a large, clean bowl, beat egg whites with an electric mixer on medium speed until stiff peaks form (3-5 minutes).
  5. Slowly Drizzle Syrup: Once syrup reaches temperature, remove from heat. With mixer on medium, slowly and carefully drizzle hot syrup into egg whites in a thin, steady stream. Avoid pouring on beaters.
  6. Continue Beating: After adding all syrup, continue beating on medium-high speed for 5-7 minutes, or until bowl is cool to the touch and mixture is thickened and glossy.
  7. Add Jell-O Mixture: Add the bloomed Jell-O mixture to the meringue and beat until well combined.
  8. Add Vanilla Extract: Stir in the vanilla extract.
  9. Incorporate Nuts: Gently fold in the chopped nuts. Be careful not to overmix.
  10. Prepare Surface: Line a baking sheet with parchment or wax paper. Dust generously with powdered sugar.
  11. Drop by Spoonfuls: Drop spoonfuls of the divinity mixture onto the prepared baking sheet (1-2 inches in diameter).
