- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 1/4 cup water

- 2 large egg whites, at room temperature

- 1 cup chopped nuts (walnuts, pecans, or almonds)
- Powdered sugar, for dusting
Instructions
- Bloom the Gelatin: In a medium bowl, dissolve the Jell-O gelatin in 1/4 cup of cold water. Ensure all crystals are fully dissolved. Let sit for at least 5 minutes to “bloom.”
- Combine Ingredients (Syrup): In a medium saucepan, combine granulated sugar, light corn syrup, water, and salt. Stir until sugar is moistened.
- Cook to Soft-Ball Stage: Place saucepan over medium heat. Clip a candy thermometer to the side (avoiding the bottom). Cook without stirring until it reaches 235-240°F (113-116°C).
- Whip Egg Whites: While syrup cooks, in a large, clean bowl, beat egg whites with an electric mixer on medium speed until stiff peaks form (3-5 minutes).
- Slowly Drizzle Syrup: Once syrup reaches temperature, remove from heat. With mixer on medium, slowly and carefully drizzle hot syrup into egg whites in a thin, steady stream. Avoid pouring on beaters.
- Continue Beating: After adding all syrup, continue beating on medium-high speed for 5-7 minutes, or until bowl is cool to the touch and mixture is thickened and glossy.
- Add Jell-O Mixture: Add the bloomed Jell-O mixture to the meringue and beat until well combined.
- Add Vanilla Extract: Stir in the vanilla extract.
- Incorporate Nuts: Gently fold in the chopped nuts. Be careful not to overmix.
- Prepare Surface: Line a baking sheet with parchment or wax paper. Dust generously with powdered sugar.
- Drop by Spoonfuls: Drop spoonfuls of the divinity mixture onto the prepared baking sheet (1-2 inches in diameter).
- Dust with Powdered Sugar: Dust the tops of the divinity candies with more powdered sugar.
- Let Set: Let the divinity candies set at room temperature for at least 2-3 hours, or preferably overnight, until they are firm to the touch.
- Storing: Store in an airtight container at room temperature for up to a week. In humid climates, refrigerate.
