- 1 pound ground beef
- 2 cups cooked rice (preferably day-old)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 cup mixed vegetables (peas, carrots, corn), frozen or fresh
- 2 large eggs
- 3 tablespoons soy sauce (low sodium preferred)
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- 1 teaspoon ground ginger
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- Optional garnishes: chopped green onions, sesame seeds, sriracha sauce
Instructions
- Prepare Beef and Vegetables: Heat vegetable oil in a large skillet or wok over medium-high heat. Add ground beef, break it up, and cook until browned (5-7 minutes). Drain excess grease. Add onion and garlic; cook until softened and fragrant (2-3 minutes). Add mixed vegetables; cook until heated through (3-5 minutes). Season with ginger, garlic powder, and pepper. Stir well.
- Cook Eggs: Push beef mixture to one side of the skillet. Crack eggs into the empty space. Scramble until cooked through but still slightly moist. Mix eggs with the beef and vegetable mixture.
- Add Rice and Sauce: Add cooked rice to the skillet. Break it up with a spatula. Pour soy sauce and sesame oil over the rice. Stir well to combine.
- Cook Fried Rice: Continue to cook for 5-7 minutes, stirring frequently, until the rice is heated through and slightly browned.
- Serve: Remove from heat and transfer to serving bowls. Garnish with green onions and sesame seeds (optional). Serve immediately. Add sriracha for extra heat, if desired.
Notes
- Use day-old rice: Drier and less likely to clump. If using fresh rice, cool it completely on a baking sheet first.
- Don’t overcrowd the pan: Cook in batches if necessary.
- Adjust seasoning: Customize soy sauce, sesame oil, ginger, garlic powder, and pepper to your taste.
- Add other vegetables: Broccoli, bell peppers, mushrooms, or bean sprouts work well.
- Add protein: Shrimp, chicken, pork, or tofu can be added.
- Vegetarian option: Omit ground beef and add more vegetables or tofu.
- Gluten-free option: Use tamari instead of soy sauce.
- Spice it up: Add red pepper flakes or sriracha.
- Add a fried egg: Top with a fried egg for extra richness.
- Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or skillet.
