- 1 cup of grits (stone-ground preferred)
- 4 cups of water or chicken broth
- 1 cup of shredded sharp cheddar cheese
- 1/2 cup of heavy cream
- 4 large eggs
- 1 tablespoon of butter
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of onion powder
- 1 cup of cooked and crumbled breakfast sausage or bacon (optional)
- 1 avocado, sliced (for topping)
- Chopped green onions (for garnish)
- Hot sauce (optional, for serving)
Instructions
- In a medium saucepan, bring 4 cups of water or chicken broth to a boil over medium-high heat.
- Once boiling, slowly whisk in 1 cup of grits to prevent clumping.
- Reduce heat to low, cover, and let simmer for 20-25 minutes, stirring occasionally. Add more liquid if needed for desired consistency.
- Stir in 1 cup of shredded sharp cheddar cheese, 1/2 cup of heavy cream, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, 1/2 teaspoon of garlic powder, and 1/2 teaspoon of onion powder. Mix until cheese is melted and well combined. Adjust seasoning if necessary.
- In a non-stick skillet, melt 1 tablespoon of butter over medium heat.
- Crack 4 large eggs into the skillet. Cook sunny-side up for 2-3 minutes or scramble for 3-4 minutes, seasoning with salt and pepper.
- Remove eggs from skillet and set aside.
- If using, cook breakfast sausage or bacon in the same skillet until browned and crispy. Remove and set aside.
- Spoon a generous portion of creamy grits into a large bowl.
- If using, sprinkle cooked sausage or bacon over the grits.
- Place cooked eggs on top of the grits.
- Top with sliced avocado.
- Garnish with chopped green onions.
- Drizzle with hot sauce if desired.
