- 4 salmon fillets (about 6 ounces each)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 ripe mango, diced
- 1/2 red onion, finely chopped
- 1 jalapeño, seeded and minced
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Salt to taste
Instructions
- In a small bowl, combine the olive oil, garlic powder, paprika, salt, and pepper. Whisk until well combined.
- Place the salmon fillets in a shallow dish or resealable plastic bag. Pour the marinade over the salmon, ensuring each fillet is well coated.
- Cover the dish or seal the bag and let the salmon marinate in the refrigerator for at least 30 minutes (up to 2 hours for enhanced flavor).
- Dice the ripe mango into small cubes.
- Finely chop the red onion. (Soak in cold water for 10 minutes if desired to mellow the flavor.)
- Seed and mince the jalapeño. Adjust the amount for desired spice level.
- In a medium bowl, combine the diced mango, chopped red onion, minced jalapeño, and chopped cilantro.
- Squeeze the juice of one lime over the mixture and add a pinch of salt. Gently toss until well combined.
- Taste and adjust seasoning if necessary. Let the salsa sit in the refrigerator for at least 15 minutes to meld flavors.
- Preheat your grill to medium-high heat and lightly oil the grates.
- Remove the salmon from the marinade, allowing excess to drip off. Place fillets skin-side down on the grill.
- Grill for about 4-5 minutes on the first side without moving them.
- Carefully flip the salmon using a spatula and grill for an additional 4-5 minutes. The salmon is done when it flakes easily and reaches an internal temperature of 145°F (63°C).
- Remove the salmon from the grill and let it rest for a couple of minutes.
- Stir the mango salsa and adjust with more lime juice or olive oil if needed.
- Serve each salmon fillet topped with a generous spoonful of mango salsa. Garnish with additional cilantro or lime wedges if desired.
Notes
- For a milder salsa, reduce the amount of jalapeño or remove the seeds.
- This dish pairs well with coconut rice, quinoa, or a simple green salad.
