  • 4 salmon fillets (about 6 ounces each)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt to taste

Instructions

  1. In a small bowl, combine the olive oil, garlic powder, paprika, salt, and pepper. Whisk until well combined.
  2. Place the salmon fillets in a shallow dish or resealable plastic bag. Pour the marinade over the salmon, ensuring each fillet is well coated.
  3. Cover the dish or seal the bag and let the salmon marinate in the refrigerator for at least 30 minutes (up to 2 hours for enhanced flavor).
  4. Dice the ripe mango into small cubes.
  5. Finely chop the red onion. (Soak in cold water for 10 minutes if desired to mellow the flavor.)
  6. Seed and mince the jalapeño. Adjust the amount for desired spice level.
  7. In a medium bowl, combine the diced mango, chopped red onion, minced jalapeño, and chopped cilantro.
  8. Squeeze the juice of one lime over the mixture and add a pinch of salt. Gently toss until well combined.
  9. Taste and adjust seasoning if necessary. Let the salsa sit in the refrigerator for at least 15 minutes to meld flavors.
  10. Preheat your grill to medium-high heat and lightly oil the grates.
  11. Remove the salmon from the marinade, allowing excess to drip off. Place fillets skin-side down on the grill.
  12. Grill for about 4-5 minutes on the first side without moving them.
  13. Carefully flip the salmon using a spatula and grill for an additional 4-5 minutes. The salmon is done when it flakes easily and reaches an internal temperature of 145°F (63°C).
  14. Remove the salmon from the grill and let it rest for a couple of minutes.
  15. Stir the mango salsa and adjust with more lime juice or olive oil if needed.
  16. Serve each salmon fillet topped with a generous spoonful of mango salsa. Garnish with additional cilantro or lime wedges if desired.

  • For a milder salsa, reduce the amount of jalapeño or remove the seeds.
