  • Author: Maria
  • Total Time: 145 minutes
  • Yield: 4 servings 1x

Description

These grilled lamb chops are marinated in a zesty mix of garlic, fresh herbs, and Dijon mustard, then grilled to juicy perfection. Ideal for impressing guests, they offer a delicious and tender meal for any occasion.

Ingredients

Scale
  • 8 lamb chops, about 1 inch thick
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon Dijon mustard
  • 1/4 cup olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Juice of 1 lemon

Instructions

  1. In a medium bowl, combine the minced garlic, chopped rosemary, chopped thyme, Dijon mustard, olive oil, lemon juice, salt, and black pepper. Whisk until well blended.
  2. Place the lamb chops in a large resealable plastic bag or shallow dish. Pour the marinade over the lamb, ensuring each chop is well coated. Seal the bag or cover the dish with plastic wrap. Marinate in the refrigerator for at least 2 hours, or overnight for enhanced flavor.
  3. About 30 minutes before grilling, take the lamb chops out of the refrigerator to allow them to come to room temperature.
  4. Preheat your grill to medium-high heat. For charcoal, ensure coals are glowing red and covered with white ash. For gas, heat for about 10-15 minutes.
  5. Dip a paper towel in vegetable oil and use tongs to wipe the grill grates to prevent sticking.
  6. Place the marinated lamb chops on the hot grill in a single layer, avoiding overcrowding.
  7. Grill the lamb chops for about 4-5 minutes on one side without moving them to develop a nice crust.
  8. Carefully flip the lamb chops using tongs and grill for another 4-5 minutes for medium-rare. For more well-done, cook an additional 2-3 minutes per side.
  9. Use a meat thermometer to check the internal temperature: 135°F (57°C) for medium-rare, 145°F (63°C) for medium.
  10. Once done, carefully remove the lamb chops from the grill and place them on a cutting board or plate.
  11. Allow the lamb chops to rest for about 5-10 minutes to let the juices redistribute.
  12. Arrange the lamb chops on a serving platter and garnish with additional fresh herbs if desired.
  13. Serve with roasted vegetables, a fresh salad, or creamy mashed potatoes. Drizzle with extra olive oil or lemon juice for added flavor.
  14. Serve warm and enjoy the delicious flavors of the grilled lamb chops!

Notes

  • Choose quality lamb chops that are bright red with good marbling for the best flavor and juiciness.
  • Adjust the marinating time based on your schedule; longer marination enhances flavor.
  • Feel free to experiment with different herbs or spices in the marinade to suit your taste.
