- 2 large eggs

- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 lemon, cut into wedges (for serving)
- 4 large potatoes (Russet or Yukon Gold work well)
- 2 tablespoons vegetable oil
- Salt to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Rinse the fish fillets under cold water and pat them dry with paper towels.
- In three shallow dishes, prepare your breading station:
- First dish: flour seasoned with salt, pepper, garlic powder, onion powder, and paprika.
- Second dish: beaten eggs.
- Third dish: breadcrumbs.
- Dredge each fish fillet in the flour mixture, dip in the eggs, and coat with breadcrumbs.
- Line a baking sheet with parchment paper, place the breaded fish fillets on it, and drizzle with olive oil.
- Wash, peel, and cut the potatoes into 1/4 inch thick sticks.
- Soak the cut potatoes in cold water for at least 30 minutes.
- Drain and pat the potatoes dry with a kitchen towel.
- Toss the dried potato sticks with vegetable oil and salt in a large bowl.
- Spread the seasoned fries in a single layer on another baking sheet.
- Place both baking sheets in the oven. Bake the fish for 15-20 minutes and the fries for 25-30 minutes, flipping the fries halfway through.
- Ensure the fish reaches an internal temperature of 145°F (63°C).
- Arrange the cooked fish fillets and fries on a serving platter.
- Squeeze fresh lemon juice over the fish and add lemon wedges on the side.
- Serve hot with your favorite dipping sauces.
