  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 lemon, cut into wedges (for serving)
  • 4 large potatoes (Russet or Yukon Gold work well)
  • 2 tablespoons vegetable oil
  • Salt to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the fish fillets under cold water and pat them dry with paper towels.
  3. In three shallow dishes, prepare your breading station:
    • First dish: flour seasoned with salt, pepper, garlic powder, onion powder, and paprika.
    • Second dish: beaten eggs.
    • Third dish: breadcrumbs.
  4. Dredge each fish fillet in the flour mixture, dip in the eggs, and coat with breadcrumbs.
  5. Line a baking sheet with parchment paper, place the breaded fish fillets on it, and drizzle with olive oil.
  6. Wash, peel, and cut the potatoes into 1/4 inch thick sticks.
  7. Soak the cut potatoes in cold water for at least 30 minutes.
  8. Drain and pat the potatoes dry with a kitchen towel.
  9. Toss the dried potato sticks with vegetable oil and salt in a large bowl.
  10. Spread the seasoned fries in a single layer on another baking sheet.
  11. Place both baking sheets in the oven. Bake the fish for 15-20 minutes and the fries for 25-30 minutes, flipping the fries halfway through.
  12. Ensure the fish reaches an internal temperature of 145°F (63°C).
  13. Arrange the cooked fish fillets and fries on a serving platter.
  14. Squeeze fresh lemon juice over the fish and add lemon wedges on the side.
  15. Serve hot with your favorite dipping sauces.
