Tender beef sirloin tips seared to perfection and simmered in a flavorful garlic rosemary sauce. A quick and easy weeknight meal!

- 1.5 lbs Beef Sirloin Tips, cut into 1-inch cubes
- 2 tablespoons Olive Oil, extra virgin
- 4 cloves Garlic, minced
- 2 tablespoons Fresh Rosemary, chopped
- 1 teaspoon Dried Thyme
- 1/2 teaspoon Red Pepper Flakes (optional, for heat)
- 1/4 cup Beef Broth
- 2 tablespoons Balsamic Vinegar
- 1 tablespoon Worcestershire Sauce
- 1 tablespoon Dijon Mustard
- 1 tablespoon Cornstarch (for thickening, optional)
- 1 tablespoon Cold Water (if using cornstarch)
- Salt and Black Pepper to taste
- Fresh Rosemary sprigs, for garnish (optional)
Instructions
- Prepare the Beef Tips: Pat the beef tips dry with paper towels and season generously with salt and black pepper.
- Sear the Beef Tips: Heat olive oil in a large skillet over medium-high heat. Add beef tips in a single layer (work in batches if needed). Sear for 2-3 minutes per side, until browned. Remove from skillet and set aside, covering loosely with foil.
- Make the Garlic Rosemary Sauce: Reduce heat to medium. Add minced garlic to the skillet and sauté for 30 seconds, until fragrant. Add chopped rosemary, dried thyme, and red pepper flakes (if using). Cook for 30 seconds, stirring constantly.
- Pour in beef broth, balsamic vinegar, and Worcestershire sauce. Stir to combine and scrape up any browned bits from the bottom of the skillet. Bring to a simmer and cook for 5-7 minutes, until slightly reduced.
- Stir in Dijon mustard.
- (Optional – Thicken Sauce): Whisk together cornstarch and cold water in a small bowl. Gradually add the cornstarch slurry to the simmering sauce, stirring constantly, until the sauce thickens to your desired consistency.
- Combine Beef Tips and Sauce: Return the seared beef tips to the skillet with the sauce. Stir to coat evenly. Simmer for 2-3 minutes, until beef tips are heated through and the sauce has thickened slightly.
- Taste and adjust seasoning as needed.
- Serve: Serve immediately, garnished with fresh rosemary sprigs (optional). Serve over rice, mashed potatoes, pasta, or polenta.
