- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon paprika
- Salt and pepper, to taste
- 1 lemon, zested and juiced
- 1 pound asparagus, trimmed
- 1 tablespoon butter
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- Drizzle 1 tablespoon of olive oil in a large baking dish.
- In a small bowl, mix together minced garlic, paprika, salt, pepper, lemon zest, and lemon juice.
- Place cod fillets in the baking dish and brush the garlic mixture generously over each fillet.
- Drizzle the remaining tablespoon of olive oil over the cod.
- Wash the asparagus under cold water and trim the tough ends.
- Toss the trimmed asparagus with a drizzle of olive oil, salt, and pepper in a large bowl.
- Spread the asparagus on a baking sheet in a single layer.
- Place the baking dish with cod in the preheated oven and set a timer for 10 minutes.
- After 10 minutes, add the baking sheet with asparagus to the oven.
- Cook for an additional 10-15 minutes until the cod flakes easily and the asparagus is tender but still crunchy.
- Melt the butter in a small saucepan over low heat and add a squeeze of lemon juice.
- Carefully remove the cod and asparagus from the oven.
- On a serving platter, place the cod fillets and spoon any remaining garlic mixture over the top.
- Arrange the asparagus alongside the cod.
- Drizzle the melted lemon butter over both the cod and asparagus.
- Sprinkle freshly chopped parsley over the dish for garnish.
