  • 1 pound asparagus, trimmed
  • 1 tablespoon butter
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Drizzle 1 tablespoon of olive oil in a large baking dish.
  3. In a small bowl, mix together minced garlic, paprika, salt, pepper, lemon zest, and lemon juice.
  4. Place cod fillets in the baking dish and brush the garlic mixture generously over each fillet.
  5. Drizzle the remaining tablespoon of olive oil over the cod.
  6. Wash the asparagus under cold water and trim the tough ends.
  7. Toss the trimmed asparagus with a drizzle of olive oil, salt, and pepper in a large bowl.
  8. Spread the asparagus on a baking sheet in a single layer.
  9. Place the baking dish with cod in the preheated oven and set a timer for 10 minutes.
  10. After 10 minutes, add the baking sheet with asparagus to the oven.
  11. Cook for an additional 10-15 minutes until the cod flakes easily and the asparagus is tender but still crunchy.
  12. Melt the butter in a small saucepan over low heat and add a squeeze of lemon juice.
  13. Carefully remove the cod and asparagus from the oven.
  14. On a serving platter, place the cod fillets and spoon any remaining garlic mixture over the top.
  15. Arrange the asparagus alongside the cod.
  16. Drizzle the melted lemon butter over both the cod and asparagus.
  17. Sprinkle freshly chopped parsley over the dish for garnish.
