Instructions

  1. Combine Mint, Sugar, and Water: In a small saucepan, combine the mint leaves, sugar, and water.
  2. Heat and Stir: Place the saucepan over medium heat. Stir constantly until the sugar dissolves completely. You should see the mixture becoming clear.
  3. Simmer: Once the sugar is dissolved, bring the mixture to a gentle simmer. Let it simmer for about 2-3 minutes. This allows the mint flavor to really infuse into the syrup. Don’t let it boil vigorously, or you risk losing some of the delicate mint aroma.
  4. Remove from Heat: Take the saucepan off the heat and let the syrup steep for at least 30 minutes. The longer it steeps, the stronger the mint flavor will be. You can even let it steep for an hour or two if you have the time.
  5. Strain the Syrup: After steeping, strain the syrup through a fine-mesh sieve into a clean jar or container. Discard the mint leaves. You should have a beautiful, green-tinged mint simple syrup.
  6. Cool Completely: Allow the syrup to cool completely before using it in the mojitos. You can store the syrup in an airtight container in the refrigerator for up to 2 weeks.
