Instructions

  1. Prepare Cheesecake Filling: In a medium bowl, beat softened cream cheese and 1/4 cup sugar until light and fluffy. Stir in vanilla extract, then add egg and beat until just combined. Do not overmix.
  2. Prepare Dry Coating: In a shallow dish, whisk together flour, 1/4 tsp cinnamon, nutmeg, and salt. Place panko breadcrumbs in another shallow dish. In a third dish, combine 1/4 cup sugar and 1/2 tsp cinnamon.
  3. Form Cheesecake Bites: Cover filling and refrigerate for at least 30 minutes. Scoop tablespoon-sized portions and roll into balls. Place on a parchment-lined baking sheet and freeze for at least 1 hour.
