Instructions
- Prepare Cheesecake Filling: In a medium bowl, beat softened cream cheese and 1/4 cup sugar until light and fluffy. Stir in vanilla extract, then add egg and beat until just combined. Do not overmix.
- Prepare Dry Coating: In a shallow dish, whisk together flour, 1/4 tsp cinnamon, nutmeg, and salt. Place panko breadcrumbs in another shallow dish. In a third dish, combine 1/4 cup sugar and 1/2 tsp cinnamon.
- Form Cheesecake Bites: Cover filling and refrigerate for at least 30 minutes. Scoop tablespoon-sized portions and roll into balls. Place on a parchment-lined baking sheet and freeze for at least 1 hour.
- Coat Cheesecake Bites: Remove a few frozen bites at a time. Dredge in flour mixture, then dip in panko breadcrumbs, and finally roll in sugar-cinnamon mixture. Return coated bites to the freezer for another 30 minutes.
- Fry Cheesecake Bites: Heat vegetable oil in a deep fryer or pot to 350°F (175°C). Carefully add coated bites in batches, being careful not to overcrowd the fryer or pot. Fry for 1-2 minutes per side, or until golden brown and crispy.
- Serve: Remove from oil and drain on a wire rack lined with paper towels. Cool slightly before serving. Drizzle with optional toppings like chocolate sauce, caramel sauce, whipped cream, or fresh berries. Serve immediately.
