Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 tablespoon unsalted butter
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 cup mushrooms, sliced (cremini preferred)
- 1 cup heavy cream
- 1 cup chicken broth
- 1 tablespoon Dijon mustard
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts.
- Cook for 5-7 minutes on each side until golden brown and cooked through. Check for doneness by cutting into the thickest part; it should be no longer pink.
- Remove the chicken from the skillet and cover with aluminum foil to keep warm.
- In the same skillet, reduce heat to medium and add the butter. Let it melt and foam.
- Add the chopped onion and sauté for 3-4 minutes until translucent.
- Add minced garlic and sliced mushrooms, cooking for an additional 5-6 minutes until mushrooms are tender.
- Pour in the chicken broth, scraping the bottom of the skillet to deglaze.
- Stir in heavy cream, Dijon mustard, dried thyme, and dried rosemary. Simmer for 5-7 minutes until slightly thickened.
- Adjust seasoning with salt and pepper as needed.
- Return the cooked chicken to the skillet, spooning sauce over each piece.
- Simmer for an additional 3-5 minutes to allow flavors to meld.
- Serve each chicken breast on a plate, generously ladling the creamy mushroom sauce over the top.
- Garnish with chopped fresh parsley for color and flavor.
- Pair with buttery mashed potatoes or a simple green salad for a complete meal.
Notes
- For added acidity, squeeze lemon juice over the dish before serving.
- For a heartier meal, toss in cooked pasta or rice before serving.
- This dish can be made ahead and stored separately in the refrigerator.
