Instructions
- In a large mixing bowl, combine the dry ingredients: flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg (if using). Whisk until well combined.
- In a separate bowl, whisk together the wet ingredients: buttermilk, egg, melted butter, and vanilla extract. Ensure the butter isnt too hot to avoid cooking the egg.
- Pour the wet ingredients into the dry ingredients. Gently fold together using a spatula or wooden spoon until just combined. A few lumps are fine; do not overmix.
- In a deep frying pan or heavy-bottomed pot, pour enough vegetable oil to fill it about 2 inches deep.
- Heat the oil over medium heat until it reaches 350°F (175°C). Use a candy thermometer or drop a small amount of batter into the oil; it should sizzle and rise to the surface.
- Prepare a plate lined with paper towels to drain the donuts after frying.
- Using a piping bag or a zip-top bag with the corner snipped off, pipe small circles of batter into the hot oil, about 1 to 1.5 inches in diameter.
- Fry the donuts in batches, being careful not to overcrowd the pan. Fry for about 1-2 minutes on each side, or until golden brown. They will float and the edges will look set when ready to flip.
- Use a slotted spoon to remove the donuts from the oil and transfer them to the paper towel-lined plate to drain.
- Repeat the frying process with the remaining batter, monitoring the oil temperature.
- While the donuts are still warm, dust them with powdered sugar. Place powdered sugar in a large zip-top bag, add a few donuts at a time, and shake gently to coat.
- Optionally, drizzle with chocolate glaze, sprinkle with sprinkles, or dust with cinnamon sugar for added flavor.
