- 3 large eggs, separated

Instructions
- Start by melting the chocolate and butter together. Use a double boiler or microwave in 30-second intervals, stirring in between until smooth. Avoid overheating the chocolate.
- Once melted, remove from heat and let cool slightly until warm.
- In a separate bowl, whisk the egg yolks with granulated sugar and vanilla extract until pale and slightly thickened (about 2-3 minutes).
- Gently fold the egg yolk mixture into the melted chocolate until just blended.
- In a clean, dry bowl, add egg whites and a pinch of salt. Beat on medium speed until soft peaks form (about 3-4 minutes).
- Gradually add a tablespoon of sugar while continuing to beat. Increase speed to high and beat until stiff peaks form.
- Carefully fold the whipped egg whites into the chocolate mixture in three additions, maintaining airiness.
- In another bowl, whip the heavy cream on medium-high speed until soft peaks form (about 2-3 minutes).
- Gently fold the whipped cream into the chocolate mixture in three additions, being careful to keep the texture light.
- Transfer the mousse into serving dishes (individual cups or a large bowl).
- Cover with plastic wrap or a lid and refrigerate for at least 2 hours, preferably overnight for best results.
- Remove the mousse from the refrigerator and gently peel off any plastic wrap.
- Garnish with chocolate shavings, cocoa powder, fresh berries, or a dollop of whipped cream if desired.
