Ingredients
Scale
- 1 pound boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
- 2 cups fresh spinach, chopped
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1 tablespoon lemon juice
- 1/2 teaspoon red pepper flakes (optional, for a bit of heat)
- Fresh parsley, chopped (for garnish)
Instructions
- Pat the chicken breasts dry with paper towels to ensure a nice sear.
- Season both sides of the chicken breasts with garlic powder, onion powder, salt, and pepper.
- In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts to the skillet.
- Cook the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is golden brown. Remove the chicken from the skillet and set aside.
- In the same skillet, reduce the heat to medium and add the chopped spinach. Sauté for 2-3 minutes until wilted.
- Pour in the heavy cream and stir to combine, scraping up any browned bits from the skillet.
- Add the grated Parmesan cheese and stir until melted and the sauce is creamy, about 2-3 minutes.
- Season the sauce with Italian seasoning, lemon juice, and red pepper flakes (if using). Adjust seasoning with salt and pepper as needed.
- Return the cooked chicken to the skillet, nestling it into the creamy sauce. Spoon sauce over the chicken.
- Simmer for an additional 5 minutes to allow the chicken to absorb the flavors.
- Remove the skillet from heat once the chicken is heated through and the sauce is bubbling.
- Plate the chicken and generously spoon the creamy spinach Parmesan sauce over the top.
- Garnish with freshly chopped parsley.
Notes
- For added vegetables, consider including sun-dried tomatoes or mushrooms sautéed with the spinach.
- For a lighter version, substitute heavy cream with half-and-half or a plant-based cream alternative.
- This dish pairs well with pasta, rice, or crusty bread to soak up the sauce.
