- 2 pounds boneless, skinless chicken breasts
- 1 packet ranch seasoning mix
- 1 packet cream cheese (8 oz)
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/4 cup green onions, chopped
- 1/2 cup chicken broth
- Salt and pepper to taste
Instructions
- Place the boneless, skinless chicken breasts in the bottom of a 6-quart slow cooker.
- Sprinkle the ranch seasoning mix evenly over the chicken.
- Cut the cream cheese into smaller chunks and place it on top of the chicken and ranch seasoning.
- Pour the chicken broth over the top and season with salt and pepper to taste.
- Cover the slow cooker and set it to cook on low for 6-8 hours or on high for 3-4 hours.
- About halfway through, stir the chicken to help the cream cheese melt and mix with the other ingredients.
- Once the cooking time is up, check the chicken for doneness; it should be tender and easily shred with a fork.
- Shred the chicken in the slow cooker using two forks.
- Stir in the shredded cheddar cheese until melted and well combined.
- Fold in the crumbled bacon and sprinkle the chopped green onions on top.
- Serve over rice, mashed potatoes, in a bun, or in lettuce wraps. Enjoy!
