Description
A refreshing and creamy Coconut Mojito Mocktail with fresh mint, lime, coconut cream, and club soda.
Ingredients
Scale
- 1/2 cup fresh mint leaves, plus extra sprigs for garnish
- 2 tablespoons granulated sugar
- 1/4 cup fresh lime juice (from about 2–3 limes)
- 1 cup coconut cream
- 1/2 cup coconut water
- 1/2 cup club soda, chilled
- Ice cubes
- Lime wedges, for garnish
- Optional: Toasted coconut flakes, for garnish
Instructions
- Muddle the Mint: In a sturdy glass or cocktail shaker, combine the mint leaves and sugar. Gently muddle them together for 15-20 seconds, bruising the mint to release its aroma.
- Add Lime Juice: Pour the fresh lime juice into the glass or shaker with the muddled mint and sugar. Stir well to combine and dissolve the sugar completely. Taste and add more sugar if desired.
- Combine Coconut Cream and Water: In a separate pitcher or measuring cup, whisk together the coconut cream and coconut water until smooth and well combined.
- Add Ice: Fill the glass or shaker with ice cubes.
- Pour in Coconut Mixture: Pour the coconut cream and coconut water mixture over the ice.
- Add Mint-Lime Base: Pour the muddled mint, sugar, and lime juice mixture over the coconut mixture.
- Stir Gently: Gently stir the mixture to combine all the ingredients.
- Top with Club Soda: Top off the glass with chilled club soda.
- Garnish: Garnish with a sprig of fresh mint, a lime wedge, and a sprinkle of toasted coconut flakes (if using).
- Serve Immediately: Serve your Coconut Mojito Mocktail immediately and enjoy!
Notes
- For a sweeter mojito, add more sugar or simple syrup.
- Muddle in fresh fruit like strawberries or pineapple for a fruity twist.
- Add a slice of jalapeño for a spicy kick.
- Use coconut-flavored sparkling water instead of club soda to enhance the coconut flavor.
- To make it a cocktail, add 1.5 ounces of white rum to the shaker before adding the ice.
- Adjust the amount of coconut cream for a lighter or creamier mocktail.
- Infuse the sugar with mint or lime zest for an extra layer of flavor.
- To make a batch, multiply the ingredients and combine in a pitcher. Add ice just before serving.
- Use fresh, vibrant mint leaves and fresh limes for the best flavor.
- Use full-fat coconut cream for the creamiest texture. Refrigerate the can of coconut cream overnight before using it.
- Use unsweetened coconut water.
- Use chilled club soda for the best fizz.
- Store leftovers in the refrigerator for up to 24 hours, but the club soda will lose its fizz over time.
