This classic meatloaf features a savory blend of ground beef, breadcrumbs, and seasonings, topped with a sweet and tangy ketchup glaze. It’s a comforting dish ideal for family dinners, best served with mashed potatoes and green beans.

- 1 ½ pounds ground beef (80% lean)
- 1 cup breadcrumbs (preferably plain)
- 1 cup milk
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 2 large eggs
- 2 tablespoons Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon dried thyme
- ½ teaspoon dried oregano
- ½ cup ketchup (for topping)
- 1 tablespoon brown sugar (optional, for topping)
- 1 tablespoon apple cider vinegar (optional, for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the breadcrumbs and milk. Allow the breadcrumbs to soak in the milk for about 5 minutes.
- Heat a small skillet over medium heat. Add the chopped onion and sauté for about 5 minutes, or until translucent. Add the minced garlic and cook for an additional minute. Remove from heat and let cool slightly.
- In the bowl with the soaked breadcrumbs, add the ground beef, sautéed onion and garlic, eggs, Worcestershire sauce, Dijon mustard, salt, black pepper, thyme, and oregano. Mix until just combined.
- Transfer the meat mixture to a lightly greased loaf pan or shape it into a loaf on a lined baking sheet.
- In a small bowl, mix together the ketchup, brown sugar, and apple cider vinegar (if using). Spread this mixture evenly over the top of the meatloaf.
- Place the meatloaf in the preheated oven and bake for 1 hour, or until the internal temperature reaches 160°F (70°C).
- Halfway through baking, check the meatloaf. If the top is browning too quickly, cover it loosely with aluminum foil.
- Once done, remove from the oven and let it rest for about 10-15 minutes before slicing.
Notes
- For a crustier exterior, shape the meatloaf on a baking sheet instead of using a loaf pan.
- Feel free to customize the toppings or add your favorite herbs and spices to the meat mixture for extra flavor.
