Description

  • 1 ½ pounds ground beef (80% lean)
  • 1 cup breadcrumbs (preferably plain)
  • 1 cup milk
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ cup ketchup (for topping)
  • 1 tablespoon brown sugar (optional, for topping)
  • 1 tablespoon apple cider vinegar (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the breadcrumbs and milk. Allow the breadcrumbs to soak in the milk for about 5 minutes.
  3. Heat a small skillet over medium heat. Add the chopped onion and sauté for about 5 minutes, or until translucent. Add the minced garlic and cook for an additional minute. Remove from heat and let cool slightly.
  4. In the bowl with the soaked breadcrumbs, add the ground beef, sautéed onion and garlic, eggs, Worcestershire sauce, Dijon mustard, salt, black pepper, thyme, and oregano. Mix until just combined.
  5. Transfer the meat mixture to a lightly greased loaf pan or shape it into a loaf on a lined baking sheet.
  6. In a small bowl, mix together the ketchup, brown sugar, and apple cider vinegar (if using). Spread this mixture evenly over the top of the meatloaf.
  7. Place the meatloaf in the preheated oven and bake for 1 hour, or until the internal temperature reaches 160°F (70°C).
  8. Halfway through baking, check the meatloaf. If the top is browning too quickly, cover it loosely with aluminum foil.
  9. Once done, remove from the oven and let it rest for about 10-15 minutes before slicing.

Notes

  • For a crustier exterior, shape the meatloaf on a baking sheet instead of using a loaf pan.
  • Feel free to customize the toppings or add your favorite herbs and spices to the meat mixture for extra flavor.
