- 8 slices of bread (white or whole wheat)
- 4 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter (for frying)
- Optional: powdered sugar for dusting
- Optional: maple syrup for serving
Instructions
- In a small bowl, mix together the granulated sugar and ground cinnamon. Set aside.
- Cut off the crusts from each slice of bread. Save the crusts for breadcrumbs or snacks. Flatten each slice of bread with a rolling pin to about 1/4 inch thickness.
- In a medium bowl, crack the eggs and add the milk, vanilla extract, and a pinch of salt. Whisk until well combined and slightly frothy.
- Sprinkle a generous amount of the cinnamon-sugar mixture onto each slice of flattened bread. Roll each slice tightly from one end, ensuring the filling stays inside.
- In a large skillet, melt the unsalted butter over medium heat. Dip each roll-up into the egg mixture, allowing excess to drip off, then place seam side down in the skillet. Cook for 2-3 minutes on each side until golden brown and crispy. You may need to do this in batches.
- Remove cooked roll-ups from the skillet and place on a paper towel-lined plate. While warm, roll them in the remaining cinnamon-sugar mixture.
- Serve warm, dusted with powdered sugar if desired. Drizzle with maple syrup or serve it on the side for dipping. Add fresh fruit like strawberries or bananas for a refreshing touch.
