  • 4 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter (for frying)
  • Optional: powdered sugar for dusting
  • Optional: maple syrup for serving

Instructions

  1. In a small bowl, mix together the granulated sugar and ground cinnamon. Set aside.
  2. Cut off the crusts from each slice of bread. Save the crusts for breadcrumbs or snacks. Flatten each slice of bread with a rolling pin to about 1/4 inch thickness.
  3. In a medium bowl, crack the eggs and add the milk, vanilla extract, and a pinch of salt. Whisk until well combined and slightly frothy.
  4. Sprinkle a generous amount of the cinnamon-sugar mixture onto each slice of flattened bread. Roll each slice tightly from one end, ensuring the filling stays inside.
  5. In a large skillet, melt the unsalted butter over medium heat. Dip each roll-up into the egg mixture, allowing excess to drip off, then place seam side down in the skillet. Cook for 2-3 minutes on each side until golden brown and crispy. You may need to do this in batches.
  6. Remove cooked roll-ups from the skillet and place on a paper towel-lined plate. While warm, roll them in the remaining cinnamon-sugar mixture.
  7. Serve warm, dusted with powdered sugar if desired. Drizzle with maple syrup or serve it on the side for dipping. Add fresh fruit like strawberries or bananas for a refreshing touch.
