- 1 cup fresh cilantro leaves, packed
- 1/4 cup fresh lime juice (from about 2–3 limes)
- 1/4 cup olive oil, extra virgin
- 2 tablespoons water (more if needed for desired consistency)
- 1 clove garlic, minced
- 1/2 teaspoon honey or agave nectar (adjust to taste)
- 1/4 teaspoon salt (adjust to taste)
- 1/8 teaspoon black pepper (adjust to taste)
- Optional: 1/4 teaspoon cumin powder for added depth
- Optional: 1/4 jalapeño, seeded and finely minced, for a spicy kick
Instructions
- Gather Your Ingredients: Measure and prep all ingredients.
- Combine Ingredients: Place cilantro, lime juice, olive oil, water, garlic, honey/agave, salt, pepper, cumin (if using), and jalapeño (if using) into a blender or food processor.
- Blend Until Smooth: Blend on high speed until smooth and creamy (30 seconds to 1 minute). Scrape down the sides as needed.
- Check Consistency: If too thick, add water, 1 tablespoon at a time, until desired consistency is reached.
- Taste and Adjust Seasoning: Taste and adjust lime juice, honey/agave, salt, and pepper as needed.
- Chill Before Serving: Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Creamier Dressing: Add 1/4 cup plain Greek yogurt or sour cream.
- Tangier Dressing: Increase lime juice to 1/3 – 1/2 cup, add lime zest.
- Sweeter Dressing: Add more honey/agave or maple syrup.
- Spicier Dressing: Add more jalapeño or red pepper flakes.
- Herby Dressing: Add parsley, mint, or oregano.
- Vegan Dressing: Use agave nectar.
