- 1 cup shredded cheese

- 1 teaspoon chili powder
- 1 tablespoon olive oil
- Salt and pepper to taste

Instructions
- In a large mixing bowl, combine the shredded chicken with ground cumin, chili powder, salt, and pepper. Start with about 1/2 teaspoon of salt and a few cracks of black pepper, adjusting to taste.
- Add the salsa and mix until the chicken is well coated.
- If using, chop the fresh cilantro finely and fold it into the chicken mixture.
- In a skillet, heat the olive oil over medium heat, just enough to lightly coat the bottom.
- Once hot, take one tortilla and place it in the skillet for about 10-15 seconds until warm and pliable.
- Remove the tortilla and place it on a clean surface. Repeat for all tortillas, usually about 3-4 at a time.
- Take a warm tortilla and place about 2 tablespoons of the chicken filling in the center.
- Sprinkle a little shredded cheese on top of the chicken filling.
- Roll the tortilla tightly around the filling, starting from one end and tucking it in as you go.
- Place the rolled taquito seam-side down on a plate or baking sheet. Repeat until all tortillas are filled and rolled.
- In the same skillet, add more olive oil if needed and heat over medium-high.
- Carefully place the taquitos seam-side down in the skillet, avoiding overcrowding.
- Cook for about 3-4 minutes on each side until golden brown and crispy, using tongs to flip them gently.
- Transfer cooked taquitos to a paper towel-lined plate to absorb excess oil.
- Arrange the taquitos on a serving platter.
- Serve with a side of sour cream and extra salsa for dipping, along with sliced avocado and lime wedges.

- For a healthier option, you can bake the taquitos instead of frying them. Preheat the oven to 425°F (220°C), place the taquitos seam-side down on a baking sheet, and spray lightly with cooking spray. Bake for about 15-20 minutes or until crispy.
